Escape Boring Meals With My Mouth-watering Beef Chili Recipe

  • Chili is one of those recipes that everyone should have in their dinner rotation. Kept simple, it's a quick and easy anytime meal that's also highly customizable. My family likes theirs moderately spiced, with a bit of veg thrown in and a hint of smokiness from chipotle. Here's how to make it:
    2 tbsp chili powder
    1 tbsp dried oregano
    2 tsp ground cumin
    1 tsp smoked paprika
    1 tsp garlic powder
    1 tsp onion powder
    900 g lean ground beef
    1 large onion, diced
    5 cloves garlic, minced
    3 tbsp tomato paste
    3 cups beef stock
    1-796 ml can diced tomatoes
    1 or 2 chipotle peppers in adobo sauce, chopped
    1-398 ml can red kidney beans
    Brown sugar, to taste
    1 green pepper, diced
    1 cup frozen sweet corn
    Sour cream, for garnish
    Grated cheddar cheese, for garnish
    1. In a bowl, combine the first six ingredients. Add a splash of veg oil to a large pot on medium-high heat. Once hot, add the beef. Spread the meat out across the bottom of the pot and leave it alone for 3-5 minutes, to allow it to brown and develop a bit of a crust. Once there, give the meat a stir and continue cooking another few minutes until the meat's mostly cooked. If, during this process, the meat gives off a lot of liquid, drain it with a spoon so that the beef doesn't boil. Stir the onion and garlic into the pot and continue cooking 1 minute. Stir in the spice mix, and give it a minute for them to bloom and become fragrant.
    2. Add the tomato paste, then give it a minute or so to dry out slightly before adding the diced tomatoes, chipotle pepper, and beans. Season with salt and pepper, then cover with a lid (slightly ajar). Turn the heat down to low and simmer for 20 minutes. Remove the lid and give it a taste. Season with salt and pepper, then stir in brown sugar a tablespoon at a time until you reach desired sweetness. Continue simmering 5 or 6 minutes to reduce. Add the green pepper and corn, and simmer a final 3 or 4 minutes to allow the veg to soften a bit. Serve hot, garnished with sour cream and a generous sprinkle of cheddar cheese.
