North American Jiffy Cakes:
Pancake Ingredients:
1 package of Jiffy muffin mix
1 egg
2 tbsp of shortening or melted butter
1/2 cup of buttermilk
Topping Ingredients:
Blueberries (fresh or frozen)
Sugar
Water
Directions:
Mix all pancake ingredients together. Heat pan and spoon in 1/4 cup of batter per pancake. Cook and flip when brown. Finish cooking on the other side and serve with syrup. To make the syrup, cook blueberries with a little water and sugar (to taste) until thickened slightly.

We all hear our voices differently from how it really is. The reason is our heads are made up of lots of bony areas and that makes our voice, to ourselves, sound slightly lower than it does in real life. So when we hear ourselves played back, it doesn't match what we "know" our voice to sound like.
I learned of this recently in another UA-camr's videos. But trust us when we say, you really do have a very nice voice! 🥰

In Germany we also like to put apples into our pancakes and we usually eat it with cinnamon-sugar on top, because Apples and cinnamon are just a flavor combination made in heaven

Serabi solo!!! Yay! Indonesian have many varieties of serabi but I just love serabi solo more. You can put it in the refrigerator and it taste just as delicious when it fresh from the pan. I love the sweetness of it and the creaminess from the coconut milk.
Serabi also have savory version. With toppings like oncom (tofu byproduct), or more modern toppings like cheese and sausages.
Nothing can top jackfruit topping though

We Indonesian has another traditional pancake-like, called "kue apé" or some region called it "kue t*te" or it means "bo*b cake" LOL
And it has green color with crispy in the edge and in the middle looks like a fluffy mountain

In some regions, serabi or surabi is drizzled with palm sugar syrup.
You can do so many dessert recipe from Malaysia and Indonesia using just the rice flour and glutinous rice flour.
I'm an Indian Bengali, we make patishaptas every year during the winter Solistice festival in mid January. These are really popular in Bengali and other East Indian communities and they are quintessential for the festival. Traditional filling is always sweetened grated coconut but it can have other variations, this food always reminds me of winter and cold January nights.
Bengali made 1% of India and 90% of bd, don’t beg. It’s Bangladeshi dish stop steeling other ppl dish. We Bangladeshi don’t claim north or South Indian dish so don’t beg and claim our dish. Just say Bengali dish not india. Bengali don’t like to be called Indian

Ohh not the cringe cultural possession war again....just say Bengali. Pithas are a thing both in Kolkata and Bangladesh, and belongs to both. There's no such thing as a cultural food being in possession to one region strictly.
But yeah in this case putting pithas under India tag wouldn't make much sense since its prevalence and availability throughout India as a whole is too low/niche, compared to a bengali-concentrated country aka BD. Its simple logic.

I've never seen racuchy with such thinly sliced apples. That's a big nope from me and my family lol we put big chunks because that's what you're supposed to taste the most. Also we're addicted to cinnamon so that's always in as well. And yes to the glue description for the batter!

Patishapta pitha is one of my childhood faves. You're right that the pancake doesn't taste like much, but it's more about the texture (which I think Beryl got slightly wrong; should be a bit fluffier like she said, but there are many different variations so it might not be)
But, it's all about the filling
The kheer is what makes the Patishapta.
It makes me so happy when the name Beryl is on my screen. It automatically makes the day better!

A South African pancake (we usually call them pannekoek) is more like a crêpe. The traditional way to eat them is to sprinkle them with cinnamon sugar and roll them up, but you can really use any filling you want.
What you call a pancake in America, we call flapjacks. Personally I like taking muffin mix - the kind you just add milk and eggs to - especially choc mint or cappuccino, then I add just enough eggs and milk to get it to batter consistency, and I use that to make flapjacks. It's a nice treat breakfast that I like to make for my kid and their friends after a sleepover.
Anyone who knows anything about the Netherlands knows this isn’t “South African”. 🙄
As Indonesian, when you say pannekoek, what comes to my mind : "definetely Dutch cuisine". We even have our version of pannekoek. *cough* Colonialism intensifies
Totally relating to the Indonesian dish that looks so similar to our "vellayappam" (a south Indian dish eaten with egg or chicken curry). The wok and the style in which it is made is exactly the same, except that we do not steam it overly brown (as it is seen here). Nice to learn a few more recipes that I can try making. Thanks to you Beryl!

In Indonesia we have pancake called Apam/Apem. This beryl's serabi solo looks like more like Apam Selong.

Maybe Indian ancestors were trough the Java island brought their recipes to the locals , as time goes by the food begin to be the local original taste. "Serabi solo" is kind of sweet. We also have what we called "apem" here, maybe it's relate to appam ( India) ....

That serabi solo pancake is so BEAUTIFUL! I was instantly hooked by the appearance and preparation method, and I love anything with coconut. I will definitely try this!!
You can add green onions and corn nibblets to Jiffy corn muffin mix and waffle it. Serve them with butter. So good.
I didn't know there was a name for the jiffy pancakes nor that it's a staple in michigan ( from NJ ). My mom used to make them alot and you really get the butter taste showing more than traditional pancakes, plus the cornmeal adds a nice texture. 😁😘
They're also known as hoe cakes or johnny cakes. So easy and SO good.
Jiffy mixes are produced Chelsea, Michigan.

You can use rice flour to thicken sauces etc, to coat fried foods. So many uses for it.
My mom used to make Jiffy corn muffins as a treat when I was a kid. Seeing the box is always instant nostalgia. I never thought of making pancakes with that mix! I love this.
My mom too, she would add some cheese and creamed corn into the mix to make it extra delicious if it was for something like a cookout. Also delicious with soup or chili 🥰

Loved these last two videos. I never know whether I'm a sweet or savory pancake person. Did you know that in the Netherlands (where I'm from) we have actual pancake restaurants? Not breakfast places, but restaurants for evening dinners. They usually serve a wide variety of both sweet and savory Dutch pancakes (the size of a dinner plate and in between a crepe and American pancake in consistency) and some 'exotic' ones as well. My go-to at my favorite restaurant is with bacon, onions, mushrooms, peppers, cheese (and then I add some syrup to it as well, but that's just me). If you ever visit the Netherlands you should definitely try to find a 'Pannekoekenbakker' restaurant!

In Kerala, there is a dish called appam it is also made in a round edge pan and we eat with egg curry (in a coconut base )

In indonesia we also have a similar dish with serabi called apem. The difference between serabi and apem is a without crispy outer and thicker. I think it called apem from the word appam😅

Beryl!!!! That was a great success with Serabi Solooo.. I would recommend lowering the temperature so it won't get burned on the crust. and yes.. best you roll it when you eat it so you get the crust and soon the soft center in the next bite..
I'm from Texas, USA. I grew up with sweet pancakes. There was always a box of ready mix in the pantry. Nothing fancy. Just pancakes and maple syrup (not real maple syrup, it was sweet corn syrup with artificial maple flavor and caramel color...and inexpensive...). These days, no pancakes but I can smell them 5 kilometers away. 🧡💛💚💙💜
Racuchy are actually made with apple pieces (not thin slices) and with yeast. You fry them on a bigger portion of oil.
Yes! Racuchy should be pretty thick and slightly crispy!
I am from Poland and my family makes those pancakes, but we don't use yeast. I agree with the size of apple pieces. We just use a knife. My entire family calls those just "placki z jabłkiem", we are from Mazowsze. Maybe it's just us, I don't really know how the others call them. Greetings :)

For your flour collection conundrum:
Make breakfast pancakes with them. We have a huge selection of flours and mix them up to make pancakes for breakfast on a Sunday and it's great. Make sure to use 1/2 regular flour and for the rest mix it up and try it out. Use less of the strong tasting ones and there you go. Much more filling than regular pancakes and you will use up the flours eventually.
Also, if you ever bake cakes you can mix a bit of your novelty flours in there too. Nobody will even notice.
I remembered Magda as soon as I saw her in this video! I grew up in northeast Ohio and there are a LOT of Polish people there (or descendants of) and as a kid, one of them showed us that dish that Magda made in the other video (with strawberries, sour cream, and pasta).
And Beryl, more flour!? You know, soon you will have to buy an extra fridge, or a chest freezer, to keep all your extra flours!

First video where I literally could not pick a favourite! They all look so good, but I'm trying the polish ones because I love apples on pancakes and I have all the ingredients
I lived for some years in Jordan when I was a child and I was really missing atayef lately....I have made them before but not for many years and have been thinking about making them again soon but have not gotten around to it....the cream filled ones were always my favorite! A tip for those who try to make them...cover them with a clean towel/dishcloth etc when they are cooked/as you cook them it keeps them soft and will help with the not sticking together problem :)
My Mom has a whole flour cupboard now....one of my brothers has a wheat allergy and the flour collection has grown a lot!

yes! atayefs are awesome! the open ones you make here are like how my grandma would make them, but theres also a closed veriety with either a milky sweet filling, or a semolina pudding filling, or a nut filling, thats then pinched fully closed, (for this closed type you gotta work fast before the batter dries too much on the raw side) deep fried, then dipped in a rose flavored simple syrup (shira) and the tip or sealed edge is dipped in chopped pistachios, so crunchy and awesome fresh from the fryer. the open one is maybe a little more healthy though, cause yknow, no frying

Yeah The apple pancakes!!!! MMM yes so nostalgic and so good, the thing is to cut them thicker, and put them directly in the dough and then fried. yummy
Woohoo!! Atayef!! Thank you Christine and Beryl for featuring such an iconic Arabic dessert, especially during Ramadan. We make these at almost every Ramadan gathering, but it’s usually the deep fried version (which can be baked in the oven as a less unhealthy option). I also love the unbaked version, which can also be called asafeeri. I love Christine’s choice of topping, but my favorite is a type of clotted cream we call ishta. We add a drizzle of honey to that version, so if you have any left over Beryl, try drizzling honey on them. 🍯

JIFFY MIX!!!! So glad to see this, AND with a fruit topping. I'm a Michigander and would often top my pancakes with fruit syrups and sauces growing up. My favorite was pear sauce on pancakes with a drizzle of maple syrup on top (sometimes with toasted walnuts for crunch).

Yay! MI representation! Jiffy cakes are awesome, also love using Jiffy for corn casserole. And you can get the Jiffy mix for about 50-60 cents a box, so very affordable.
Jiffy Cakes…I had a friend that didn’t have much money and always had the little boxes of jiffy cornbread mix on hand because they are cheap. If we were playing cards and she just wanted to make something for everyone she could make a batch of these. Everyone loved them.

I'm not a huge maple syrup fan but it I warm it up with frozen blueberries, it mellows so much. A restaurant we used to go to had a coconut syrup for their pancakes. It was such a tropical treat for the landlocked state I lived in.
very interesting episode again i love the recipes etc but the music was a bit suspenseful in my opinion because your videos are usually so calm and relaxing :s (especially during the polish pancake)
Fun video thank you ❤️. In South Africa our pancakes are thin more like a crêpe and served with cinnamon sugar. The thicker style small pancakes are called crumpets here and typical served with jam and cream. We also have savoury filled pancakes with spinach and cheese or savoury minced beef covered in bechamel and topped with cheese. Blessings and have a beautiful day
