      He is using a Dark chocolate slab and white chocolate slab, you just search the names on Google there are too many online stores selling this. The Dark chocolate slab is a pure chocolate it doesn't contain too much sugar that is why it doesn't melts. I hope this answer will help you, thanks.

    Sir hm chocolate garnish cigars and fans normal fursh b bna skte hai kya? Ki sirf marble ki firsh b bna skte hai. Kyuki baki garnish to sheet pe bn jati hai. Bt i think cigars and fans sheet pr nhi bnega. Scraper se sheet fat skta hai na

    Hw ur chocolate get dry on sheft(counter) if i will do without putting the sheet in freezer in summers ,it will nt get dry like urs..

    I would try so many times but I didn't get because they are used AC rooms. So the counter top is so chill then they have do something.

      This is not an AC room and we r making garnidhes in this room through out the year.

      @@n.d.pandya1539 see u can not cook chocolate on direct flame. So u have to keep a utensil filled with water on direct flame and the utensil with chocolate on top of it.

      Tanuja Patil depends upon the season
      If it is summer time then u need to store them in fridge but if its winters then u can store them in a container outside

      Aur agar AC na bhi ho tab bhi garnish banate hi freezer mein daal do kuch der ke liye to bhi kaam ho jata hai

      @@Sneha01096 yes sneha AC will need making garnishing its very difficult to make if you put the garnish into fridge...in oct since feb you can make without AC...bcz the climat is cool from that month... do practital thnks

      Shivani Sheraji u need to add only few drops of liquid colour as and when
      U take out the white chocolate from microwave and mix it thoroughly and put it on the garnish table

      It's a pure chocolate, so it just dry out in few seconds. And the chocolate is Dark / white compound chocolate.
