I usually leave the original GM grease in those bulkhead plugs. I wipe the dirt, overspray, etc off the surface and supplement with dielectric grease. Whatever GM used is good stuff. I've disassembled 40 & 50 year old vehicles that had zero corrosion in the Packard 56/59 bulkhead plugs. I asked a buddy on the 67-72 Chevy truck forums that worked for GM in Flint what they used on the assembly line and he didn't remember.
On mine, I replaced all of the components with one's I got from Rock Auto. New compressor, condenser, accumulator, evaporator, heater core, low/high switch, resister, relay, etc.! Now have cold air for the winter. I used Rock Auto and Old Air Products.
