I do a similar dish but add olive oil and coconut oil to the butter and when it is pretty much cooked, I add in several tablespoons of coconut milk, put lid on, place three towels over top, set timer and let steam/sit for roughly 10 minutes....!

I wouldn't waste my time with ceramic or anything fancy/expensive for pans. I go cast iron all the way and that is plenty non-stick for anyone's needs.
Unless it is too heavy for you to handle. I love my ceramic cookware. Will use it forever. Not that i don’t like cast iron. I do.
@@carolswitzer5451 You do you. I just don't trust the coating on the pans or any nonstick pan other then cast iron. Cast iron will last multiple lifetimes if you take care of them as well and they are really cheap. The weight can be an issue for some though sure.
Since the ceramic is pore less. It doesn’t erode like other nonstick. I have owned ceramic for years with no problems. Just like cast iron if you take care of it it lasts and does a beautiful job.
