How to Make Roasted Shrimp with Lemon & Garlic (recipe included)

    Oven Roasted Shrimp with Lemon & Garlic
    Ingredients
    2 pounds (12-15 or 16-20 count) raw shrimp, peeled and deveined
    2-3 tablespoons good olive oil
    3 cloves garlic, minced
    3 lemons, sliced
    1/2 teaspoon kosher salt
    1/2 teaspoon freshly ground black pepper
    Directions
    Preheat the oven to 400 degrees F.
    In a large bowl, toss the shrimp, garlic and 2/3 of the lemon slices with 2 tablespoons of the olive oil and the salt & pepper.
    Arrange the shrimp in 1 layer on a rimmed sheet pan, ensuring that the lemon slices are spread evenly throughout. Roast for 8 to 10 minutes, just until pink and firm and cooked through. Serve alone or over gluten free pasta or rice.

    Thank you so much for this recipe. I was short on time and made this recipe in about 1/2 hour total with prep and cook time. I needed to get back to eating light and healthy after the holidays and this was the perfect topper for my salad!! You can really taste the flavor in the shrimp. I will definitely keep on making it over and over again!

      I've made a similar recipe, 350F for 15 minutes for raw shrimp that size works for me.

    We really wanted fried seafood tonight but hubby and I are just tired out so thanks for the easy recipe! I always get a handful of shucked oysters and they are small so throwing it all together! Thanks a bunch. I think I will put the olive oil in a pan and add the garlic and just let it warm before, then the oil will be infused with the garlic!

    What about if you use a different oil or butter instead ?

      as long as it has a similar or higher smoke point (grapeseed, canola, coconut or similar would work) it will be fine - I prefer the taste of olive oil. butter by itself would scorch, so you'd want to blend butter with oil if you'd like to use it in this recipe. thanks!

    I've never bought, nor cooked shrimp before. After some recipe reading and YT watching I decided to choose your vid as a tutorial. I had my doubts considering my limited chef experience (or lack of one) but I can say that the shrimps turned out soo delicious. I didn't have olive oil so I used sunflower seed oil and butter. I kept them in the oven a couple of mins more since I decided not to remove their shells but only the vein, legs and head. No idea if the shell makes the difference it is said to though.
    So thank you very much!
