as i OBSERVED/ESTIMATED from the video.. the recipe is for 6pcs fluffy pancake
-62g of egg yolks (i know you saw on the video its 72 g, but remember they weighed the container too as they started from 0. ALSO the container weighs 11g)
-22ml milk
-150g egg whites
-45g sugar (just an estimate since i saw on 47:06 the kind of measuring spoon they used, I have one but again who knows if they added more or its a different size)
-1/4 tsp cream of tartar (right after they put the sugar the small tsp im pretty certain is cream of tartar to stabilize egg whites)
-FLOUR..now the flour...it didnt show on the video how they measured the flour, i suggest just going back to this video 48:05 to have similar consistency as theirs if making at home. maybe start with 1/4 cup of flour? then if needed add more to get the consistency

Thats called taking “Pride in your Work” right there! Omg, I think I’d blow out my shorts if I saw someone that works in a restaurant sitting and cleaning menus..with spray..each one! If they take that much pride in prep you know the food is gonna beeeeeee gooooood!
My husband and I go to all kinds of restaurants and every place that we travel too! We enjoy being foodies and especially being in a clean place where people take pride in the work. I absolutely love seeing this type of pride done in their work, they are all kinds of people out there that just don’t like the work and you can see it and how they cook or how it’s presented. the sloppiness of the restaurant or whatever place that you decide to eat , We have left restaurants because we’ve noticed not cleaning us or the way people cook we watch very close and when we see something that is done so nicely absolutely get props up. And any type of work you do to have this type of foundation and pride is a must and it’s just not in restaurants honey I’m talking anywhere!

0,5 ч л соли
Желтки отделить от белков, отдельно взбить белки с солью, разрыхлителем и половиной муки. Остальное в желтки. Соединить и можно выпекать на обычной сковороде под крышкой)

Pancakes????? There were many different dish types being prepared not just pancakes😂😎. Super clean and very sanitary all the same. I'd buy whatever they cook just because of their care for cleanliness alone. That's what respect for their customers should be about. Many food prep centers and stations should take note.😋😍😋
