the way they use palm oil in road side shops, even in some restaurants is bad. they buy a tin and reheat it again and again to give u that bonda or bajji or chicken 65. until it no longer can fry the food. If you use groundnut oil, the oil will get reduced sooner, but you can re use it for sauteing. because the volume gets reduced and triple cost, they cant use ground nut oil. But sunflower oil, palm oil are a bit problematic when u boil it to high temperatures again and again.
