They add glucose syrup to the sugar and water mix to keep it stable

@@pabost10 Let the syrup continue to boil until it reaches a temperature of 149 degrees Celsius, the 'hard crack' stage.
The tables are heatable which you can see at 2:12 when the candy melts outside the pads.
