Thanks for watching! Great question! I recommend using the chicken broth but not chicken stock. Canned low-sodium chicken broth is made more out of meat instead of bones, it is lighter and more fragrant compared to chicken stock :) I actually never had veggie stock :p

Looks fantastic...I have some of this dish from a restaurant left in the fridge and will finish it this evening. Have you tried green szechuan peppercorns? At my favorite local szechuan restaurant, Szechuan Jin River in Rockville, they used to use the green ones, but not recently. The soup isn't as thick anymore... and it's not missing cornstarch because the soup isn't as opaque as it used to be. More chili bean paste maybe? Thanks for watching! The green peppercorns are used in a lot of Chongqing dishes which give a more numbing feeling to the tongue, but not as fragrant as the red ones. Adding more chili bean paste will make the soup saltier and spicier but not thicker. I think they might have reduced the amount of starch water so the soup became less thick :)
