    Thank you for the tip on adding water . I would just add jars with water and no lid to fill the space.

    Can the jars of broth go from the frig to the canner? Or let come to room temperature, then into the canner?

      No, they need to come to room temperature at minimum to avoid thermal shock to the jars.

      Because it often interferes with getting a good seal. Fatty foods are notorious for siphoning a bit and once that grease gets under the lid, it won't seal.
