    I have been smoking meat and grilling since 1973. The thing is, I just bank my charcoal to one side on any grill I use without having to use the slow and sear gizmo. My pork chops come out perfect every time as well as anything I cook. If this helps someone perfect the art of searing, grilling and smoking then more power to them. I just don't need this to turn out excellent BBQ. Not knocking any new gizmo out there, just letting you know. No brag, just fact!

      Great Point!!! I too use to stack my coals to one side to create two zone cooking. It is the original way of searing and indirect cooking. Thanks for checking out the video! Have a good weekend!

    Great video and very informative. I like the tips you gave. And I loove John Henry pecan rub! I finally smoked my oxtails using your method and they turned out great! I used a bbq rub and although a little sweet I added some peppers and spiced it up. Delicious. Keep up the awesome work!

    I enjoy your videos and please keep them coming. I noticed you bought a Weber Jumbo Joe 18 inch and watched your videos using it. I recently purchased a Slow n Sear 18-inch Travel Kettle with the charcoal basket from SnS, however, I tried using my 18 inch grate from my Kamado Joe Classic on the SnS Travel Kettle and I can't even close the lid. I measured the SnS Grate that came with my SnS Travel Kettle and it measures just over 17 inches, yet they call it an 18 inch Travel Kettle. If you can please let me know if your Jumbo Joe has an ACTUAL 18 INCH GRATE, I'm dumping my SnS Travel Kettle and getting a Jumbo Joe. Thank you in advance for info on the grate size. Please keep your videos coming as I look forward to them!!

      Hey Joe. You might not want to dump it quite yet. I just checked and the dimensions of the Jumbo Joe is the same size coming in just slightly above 17" in diameter. I checked the inside grill dimension and sure enough I got 18" from inside wall to inside wall. Hope this helps. Thanks as always for checking out the videos!

    You can set the wood on top of the grates,or you can get a hinged grate from Amazon to fit the Jumbo..

    Great video, but may I suggest burning in your new grill first. This is to remove any oils, grease, or contaminates that come with the manufacture process of the grill and a great time to season the grill as well. Always run a batch of charcoal through the grill with both bottom and top vents wide open for maximum heat, then you can grill with the next batch of briquettes. A burn in is required for all new barbecues.

    Wow, I was so impressed with the cold sear method on this relatively small grill! I am learning about grilling and this video was packed full of useful information and techniques. I saw another video about the similarly sized SNS Travel grill; I would love to see what you think about it (maybe you reviewed it already; I will search).

      Thanks for checking out the video. The Jumbo Joe is very versatile and affordable. I grab anytime I’m tailgating for going to a park to hang out with the family. I haven’t used the SNS Travel grill but I’m sure it a great product. SNS makes quality accessories that I use in all of my Webers. Have a great weekend.

    Well now I want pork chops! Great video. Have you tried using a Weber Chimney Starter for your coals? I have the mini version for travel purposes and it is the best/easiest way to light your coals. Also I took a course with Weber UK and they recommend soaking your wood chips for at least 30 mins before adding to the coal - this gives much more smoke and adds to the infusion.

    It's a disgrace on Weber's end that they refuse to sell the Jumbo Joe in Europe. For years, I've been eyeing it, but shipping from the US was either not offered at all or was like 200+ USD. Only yeste did I find a fairly acceptable offer on the American Amazon website - which was still overpriced, but oh well. 90 dollars + 60 for shipping (and there might still be some important charges waiting for me). For a lack of other options, I pulled the trigger on it, but it still angers me that in the US, you can get it any Hope Depo for like 30 dollars in clearance. Funny enough, you can absolutely buy the SnS charcoal basket for the Jumbo Joe here, even though you can't get the grill, like wtf? Anyway, absolutely love the grill and your video. Can't wait to receive my Jumbo Joe.

    Great video !! Quick question. Couldn’t you have stacked them two high for the indirect part of the cook? Seems like it would have eliminated the real estate issue. I’m new so that may be a stupid question sorry.

      Sorry for the late response. I don't know how I missed this. Happy New year first of all. My reason for not stacking is to ensure even cooking and to make sure I maintain any crust that able to be formed. That's difficult to do if they are stacked. Great question! I hope you bring more in 2022! There is no such thing as a stupid question so feel free to ask..."I'm all ears!"

    First, much thanks for this video. As someone who is looking to buy a Jumbo Joe, this was very helpful. But may I suggest that if you like parsley and pepper flavors, why not dice some fresh leaves and mash them, maybe with a few peppercorns and a bit of butter, in a mortar & pestle, instead of using dried flakes that've been sitting for months in a jar? I might also add some crushed garlic.

    Love my Jumbo Joe and the SnS Suggestion: Try a reverse sear next time I've found they get even juicier ..... Also Baby Back Maniac has a cool vid doing mods He set it up to be a "egg type smoker" I did it too and it works great Cheers!

    Just curious..how come you keep spinning it? Cant you just flip the meat over on same spot? What does spinning the grill do?

    Can you get the same results with the charcoal tray, but first using a chimney starter and then pouring the coals into the basket?

    Great video. When you put the lid on, turn it 90 degrees before bringing up the metal part. The groove on the handle top locks on to the metal bar

    If i do the exact same brine and brine it for two-to-three hours, do i need to season those chops seperately with salt? Or do they get enough salt from the brine so i dont even need to apply a light coating?

      Dski Grillz I have the adrenaline bbq basket, same as you. But I used grill grates for steaks. I like how close the charcoal is to the food with jumbo joe. Grill grates were up to 600 when I put meat on. I’ll try reverse sear with basket next time.

      It's called a loof lighter. I've put the link to one on amazon. This video was published about 4 years ago and I have since moved to using the "grill gun." It's more of a torch that uses a 1lb propane bottle. It's much more efficient at getting your charcoal started. Thanks for checking out the video.

    When I cook meat it always come out hard not soft what comes out good only is the chicken hamburgers and hotdogs is it cause I don't have a Weber grill? that the meat comes out hard help please thanks..

      djknight_bringin'_back_the_old_skool_style Thanks for the questions and for checking out the video. There are a few quick things you can do to help with the final results. 1. Brining of your meat a few hours before grilling will build in moisture and definitely give you a more tender end result. 2. Cooking slower at a lower temperature will give the meat time to come up to temperature slowly giving you a more tender out come. 3. Adding kosher salt and letting you meat come up to room temperature before cooking. Though some grill aid in better finished results, these few tips will definitely help you produce awesome finished results. Make sure to understand the internal temperature of your food is the last tip. A cheap thermometer will ensure you pull your meat off right when it’s finished making sure it is as tender as possible. Take and let me know how it comes out.

    Does anyone make a smaller charcoal basket or charcoal separator that will fit my Weber 14” portable smokey joe? So I can do indirect cooking. Thanks

      Doug Harlow Hey Doug..I will research that for you. I don’t know of one off the top of my head. In the meantime you could bank your coals on one side of the grill grate. It should work okay using that method. have a good weekend.

    What is a healthy brine solution? That does not include salt nor sugar.
    How do you eat healthy my daughter ask. I answered, by cooking what you eat yourself. You control the ingredients. Unless you can find a health conscious chief you can trust. Cooking to live -vs- cooking for profit and/or appraisal.
