Hey Felu! Great recipe. I was thinking of making fettuccini alfredo for my next meal prep dinner and this seems like a great way to increase the protein while maintaining the creaminess in the pasta. How well will this go for meal prep tho? Should I keep the sauce in a separate container and add it in each meal box after I've heated it up? Or should I just make a big batch, store it and reheat in the microwave?
I've made a similar Cheddar cheese sauce with sodium citrate. I blend it straight in with the rest of the ingredients before cooking. It creates a better texture and you don't have to worry about the cheese and water separation issue. It's a game changer.

Spice it up even more .. add fresh garlic / fresh basil / cilantro or parsley would enhance it even more . Nice work

A nice tip to maintain the emulsion is to add a bit of xanthan gum and/or sodium citrate
Would be interesting to add some nutritional yeast or MSG to it for more of that cheesy flavour 🙂

You can make this sauce cookable by adding cornstarch to it or/and evaporated milk. It wont break as easily when heated
I keep seeing all these cottage cheese recipes and they never warn about heat breaking the sauce.
How much cornstarch do you suggest adding?

Have you tried this with sodium Citrate? And if so do the ingredients melt well at high heat.
