【Vegan】Gimbap with Pineapple

- When the weather is hot, I love eating refreshing dishes. Kimbap is perfect for this occasion. It’s also great to pack it into a bento box as a meal. This time, I made kimbap with a richer and fuller filling, allowing for more vegetables and making it more nutritious. Oh, be sure to try to add some pineapple - it’s incredibly refreshing and appetizing!
Ingredients:
3 Sheets of Nori (seaweed)
1 Bowl of Rice
1 Red Radish
1 Carrot
Half a Cucumber
Half an Avocado
150g firm tofu (seasoned with a pinch of rock salt and black pepper, 1/2 teaspoon turmeric powder, 2 teaspoons nutritional yeast)
1 bunch of spinach (seasoned with 1 teaspoon organic soy sauce, a pinch of salt, 1 teaspoon sesame oil, 1 tablespoon ground toasted sesame seeds)
Seasonings:
Sesame Oil to Taste
Salt and Black Pepper to Taste
