20g Eggplant
50g Cooked Chickpeas
2 Shiitake Mushrooms
One Green Bell Pepper
4g Minced Ginger
Seasonings for Eggplant:
1 Tbsp Salt
3 Tbsp White Vinegar
500ml Water
Seasonings:
1 Tsp Pixian Doubanjiang (Broad Bean Paste)
Yongchuan Fermented Black Beans: 12 pieces
2 Tbsp Soy Sauce
1 Tsp Sesame Oil
1 Tsp Sichuan Peppercorn Oil
1/2 Tsp Sichuan Peppercorn Powder
1/2 Tsp White Pepper Powder
2 Tsp Potato Starch
50ml Water
Homestyle Tofu:
200g Firm Tofu
80g Snow Pea
Eight Woodear Mushrooms
Two Mild Red Pepper
1 Piece Shiitake Mushroom
Seasonings:
1 Tbsp Soy Sauce
1 Tsp Vegan Oyster Sauce
1/2 Tsp Potato Starch
30ml Water
Salt
