My guess is that he made the point about cross contamination because they know some will sub pork or chicken for veal. Because all the meat is beef there's no real chance of cross contamination anyway. Why he didn't just say that...I don't know.

What he's calling the inside-out cheeseburgers he did not invent. My dad was born in 1938 and did it that way sometimes. Steve needs to get off his higher than mighty attitude. What gets me when it sticks his instant read thermometer in what he cooks, he nails it almost every time. I personally don't believe it. The show does bloopers but they don't show fails. I think he needs to go to a regular cook-off in any old town and show what he can actually do.
Wash your hands between making the burgers but use the same brush to brush on the oil on all the burgers before cooking....cross contamination isn't such a big deal for you, is it Steven???
