That's not going to kill anything in your egg whites... The temperature of the syrup will drop dramatically when mixed with the whipped eggs. Plus you should maintain a high temperature for several minutes.

Hi! :-) The quantities indicated in this video are for Italian meringue. You can decrease doses.
@@SarasItaliankitchen thanks! The egg Whites should beat until stiff peaks before add the sugar syrup? Or its on another stage? What's the speed of the mixer while pouring the syrup? If keep beat the egg whites to cool it down doesn't it will over beat? the egg whites will curdle
@@chengwentyng2901 😀 Sorry for the delay. Yes, the egg whites must go to stiff peaks. Slow mixer speed, while pouring syrup. Then you pick up speed. 👍
