    My mom was a single parent with just me, but she loved to make casseroles. Was way too much food for just the two of us, so usually it fed us for dinner 2-3 total nights from one casserole dish while allowing herself to take any to work for lunch if she desired. I didn't mind, eating leftovers was common for us. During those hectic weeks she was able to get away with maybe 2-3 times the week and we ate the leftovers inbetween time. Made it easier on herself.

    Mindy! You rock, as always. I didn't grow up with casseroles at ALL. I still give my mom a hard time about it but it's just not her thing. Once I became a mom, the crockpot and large baking dishes became a weekly go to for my family. My son is 24 now but lives with me and when he sees me pull out the 9x13 baking dish, his eyes light up, lol!

    Hot dishes, casseroles and crock pots meals are our go to meals. It helps that I grew up learning to cook this way in a large family!!

    There are now only 3 adults here. We still eat casseroles when I have had a busy day. Tonight is homemade chicken pot pie. Store bought crust. Even the dessert is almost homemade from a yellow cake mix. My spaghetti now has become a baked casserole. Girl...Sometimes I do not have time for everything homemade.

      🤦🏻‍♀️🙋🏻‍♀️ I’ve done both when I was younger. That was how I learned to read over the recipe multiple times and pull out all the ingredients before I started cooking/baking.

    I use the palm of my hand. My grandma taught me how to measure using my hand. She didn't have the money way back in the depression for things like measuring utensils and had to make do. I have so many measuring utensils I'm not even sure what I have anymore and still use the method my grandma taught me. This has made me miss her so very much, at least I have the memories 🥰.

    We love casseroles! It is the ultimate way to make the shrinksession of shrinking packages purchased from the grocery store stretch farther! Most casseroles have your protein,vegetables,and some kind of grain or starch&a gravy type sauce or cream of soup. I am guessing that the people who do not like casseroles are the kind of people that can not stand for their food to touch each other on the plate that the food is served on! That's fine,we will continue to enjoy our casseroles and they can continue to make sure that their food does not mingle together on the plate! It's ALL good! Love your rice&sausage casserole,am anxious to try it! Thanks for sharing❤ casseroles and soups are very good for stretching minimal ingredients! Durkee french fried onions used to have the recipe printed on the can many many many years ago!

    Hi Mindy! We found out recently that my husband is gluten intolerant and we had to make many changes to how we eat. One of the items that has “hidden gluten” is sausage! Alot of them contain rusk as a binding agent. Just a head’s up if you are cooking for people in your family that don’t take gluten 🤗

    I'm a family of one. ME. I'm all about the casserole and any other one dish meal, and I have been for decades (40+ years since college when I was gifted the family Crock Pot and started using it regularly). Cooking that way is yummy, hardy and filling, the leftovers keep well, and such recipes are usually pretty easy and often inexpensive to put together. I even now simplify things further by converting every casserole recipe for a slow cooker. Wouldn't want to cook any other way, I'm now 63, and I probably never will! 👩‍🍳

    I grew up in a family of 4 and we didn't have much money, so casseroles and crockpot meals were a staple. I don't understand how some people don't like casseroles! 🤯🤣🤷🏽‍♀️

    Casseroles are a way of life. I feel like they are more common in colder climates. Or maybe it's just a southern and midwest thing. I grew up in a family of 5. Parents, 2 brothers, and me. We had casseroles at least once a week in the fall and winter, and usually on the weekends when it was my dad's turn to cook.

    That potato casserole is super similar to “funeral potatoes” we grew up with! Ours is shredded potatoes, sour cream, cream of chicken, and shredded cheese. ☺️

    Mindy I came from a small family I was an only child and we ate a lot of casseroles.But my mother came from a big family so guessing she had a lot of casseroles growing up.I adore casseroles.

    GF cream soup base.
    In cold pan add 3/4c CK broth. 3/4c whole milk(1/4c heavy whipping cream w 1/2c 2% milk). Whisk in 3T cornstarch. Turn on the heat. Whisk often. Watch closely, because will thicken quickly. Season to taste.
    You can change flavor by broth flavor and seasoning used.

      I wonder how this would work w a dairy free milk. Probably coconut due to higher fat. I have a a cousin that is gf and dairy free.

    Having a daughter with Celiac Disease, I use cornstarch to thicken everything. Works so well for making gravy, cheese sauce for Mac and Cheese (GF pasta of course), sausage gravy, etc. I use cornstarch even for coating chicken and other various things to fry and I definitely prefer cornstarch to flour, tastes great and much lighter.

      Same here, my adopted mother (9) kids never made them. I always went to a friends house when her mom made chicken and rice casserole or squash casserole. I loved them.

    There’s only 3 of us and I am a huge casserole person. Growing up we never had casseroles because my grandma always cooked from scratch with meat we raised and veggies we grew ourselves. We had our own eggs, our milk, she even made our butter and bread. Casseroles were super rare, I only had them at friend’s, church potlucks or other family’s homes and I loved them, they felt like a special treat. Now they are a staple because I love them and they are so easy. I know it sounds crazy but I never had a shepherds pie until college and my mind was blown.

    My mom did quite a bit of casseroles but dad was not a big fan of having them often. As a single dad with four kids I didnt have many go to recipes and did a great many crock pot cooks! Always tried to have an evening meal for my kids like I did growing up. A crock pot was a huge help. Lot of hearty soups and stews too.
    You are a treasure. Great presentations, mixed with fun, great recipes and instructions. AND you are a fantastic salesperson. Love your work. Thank you.

    I am a single person but I love casseroles that I can make and freeze. I always have several in my freezer for lunches. Saves money as I am not getting take out 5 days per week.

    Mom & Dad had 5 of us and mom hardly ever had casseroles. We were lucky enough that they both worked full time and actually met at a meat packing plant. So we never went hungry plus they had a 3 acre garden that had every veggie we would want. Mom loved to cook so maybe that's why she didn't do a lot of casseroles. Even made a dessert on weekends. Dad never wanted us in the kitchen so maybe that's why none of us learned how to cook.

    My when family or just me, and I will still make casseroles. I love them.
    That being said, I only make pasta casseroles.
    The other things like potatoes or rice or whatever, I just cook on the stove in different ways ..
    As for the green bean casserole so many people like, umm, it isn't for me. I love green beans just as they are, maybe sauteed with some butter and they are perfect. Also I don't like mushrooms and I think that green bean casserole had cream of mushroom soup.
    Now the recipe you made from PW's cook book doesn't look too bad....but it looks like something I would put on top of mashed potatoes.
    The cinnamon roll casserole looks like a really nice sweet treat. You can never over do the apples🙂.

    I love making casseroles for my family. Its me, husband, and daughter so 3 total people. Many times a 9x13 makes more then we can eat in one dinner, but thats perfect because then the husband has something to take to work for lunch. Thanks for these great ideas!     You probably already know this but arrowroot and coconut cream is great for any GF recipes.. I used to be a private cook and that was one of my recipes I made up or, you can also use cornstarch ,as you have.. but both work great and no one ever notices the coconut cream...

    When my daughter's were younger I was a single parent. Casseroles helped a lot. As they got older and now that I have 6 grandchildren, they still are a staple in all of our houses. Nothing like a Taco or Enchilada Casserole. I've made a version of a shepherds pie. My daughter made a pull a part pizza casserole and believe it or not Lasagna is a casserole too. There's also the Chicken Casserole and the obvious Tuna Casserole a true n tried pass down recipe from my grandmother to my mother to me and to my daughters. Aw, the memories. Bless you.     Growing up it was mom and my sister, brother and I and casseroles were more common than not. I had 3 kids so it was a family of five and casseroles I made casseroles at minimum 3 times a week. I think they are such a help at dinner. I even came up with a way to make American goulash into a casserole type meal.

    my husband is anti casserole and anti-leftover *because he came from a large Brady Bunch type family. He is burnt out for life on anything in a pyrex pan 😂. I have learned to get creative and scale recipes precisely for my 3 person family and all casserole type dishes are “deconstructed” lol 😂.

    My youngest son loves a casserole dish made with shredded frozen hashbrowns, shredded chicken, cheddar cheese, cream of chicken soup and crushed cornflakes with butter for the top. It is super good and easy.

    I love casseroles! They are the epitome of comfort food! Yummy. I didn’t grow up on casseroles, but as I became an adult and when I Hosted dinners, I would include some kind of casserole side dish because it feeds a lot of people.

    I also came on with a family of seven
    In order to stretch the food budget because back then my mother’s budget was only $40 I made a lot of casseroles and homemade bread rolls and desserts
    After my divorce from my first husband my children were only two and six and since money was tight I found myself making a lot of casseroles tuna noodle casserole with my kids favorite and I could usually get three meals out of it
    They also like beanie weenies which was another few meals

      Are you sure you’re not living my life😂 I was also one of seven and my mother’s budget was $40 for the week
      I love to make things from scratch we had homemade bread and homemade rolls and homemade dessert

    You just gave me a great idea for a spin on the usual corn casserole (corn pudding) that I bring for thanksgiving. I’m going to try it with the cornflake topping! I don’t know why I never thought of it. My dad is from Minnesota and I’m the oldest of 4. My family loves casseroles (hotdish if you are in MN).

      It was good! Toss the cinnamon roll pieces with the topping mixture before pouring the butter on, that’s the only thing I would change. 😊

    I came from a family of 2 kids but raised in the 70-80s and casseroles were a thing. And I grew up baptist and potlucks - fellowships were a thing which again made casseroles a thing.
    Oh I was in Oklahoma a few yrs back on a girls trip to see pioneer woman ( well to see her restaurant and studio) and everyone in the state treated us kindly.

    I want to try the cinnamon roll casserole but skip the overnight wait time. I might try it with the refrigerated style cinnamon rolls in the tube and see how it turns out. My local Meijer has Pillsbury refrigerated products on sale buy three get two free. Mindy, when I saw that in their ad I immediately thought of the ham and Swiss cheese crescent rolls that you make. They also had some deli and cheeses BOGO as well so it was a win for dinner with vegetable soup last night.

    I absolutely think you're right about casseroles! I grew up in a family of 4, which is relatively small, but my parents grew up in a families of 6 and 5 and were both pretty poor growing up, and judging by how often we ate casseroles growing up I'm guessing they ate casseroles a lot too.

    Love this video and your "short cuts" for your casseroles. I definitely like me some casseroles, for Thanksgiving I always make broccoli casserole and sweet potato casserole to take to our different stops for that day. I was a little surprised when my Mamaw told me recently that she has never made a casserole! She has 5 children, and she has told me a few times that she doesn't know how she survived with all of them lol.
