I have never used a kitchenaid mixer so I can't say how it compares to a Kenwood. But I do like a Kenwood mixer. It is the only brand of mixer I've ever used.

I own and love the design of the kitchenaid, but I’d love to use a kenwood for comparison’s sake, I must say your mixer seems to beat the ingredients a little better, especially the paddle/flat beater, that’s not actually really flat, which is probably a good thing ❣️ thanks for your answer

By mistake, my daughter grabbed Turbinado brown cane sugar instead of tightly packed light brown sugar. Because this the TBCS is so dense (large) I thought it would be better to add this sugar to the chocolate/cocoa/coffee mix (so it melts) and then add that in to batter. Will this ruin the cake? I know the 1st step: beating the butter w/ sugar til its fluffy is important. Will not having added both sugars when beating butter ruin this cake? Its her B-day cake. Thanks

Which of your chocolate cake is the most moist n stay moist? I've tried the chocolate mayonnaise n it was so moist. Do we put a milk bath to keep moist as I've seen others do that on chocolate cakes?
Hi Stephanie! I am really into match green tea desserts as of the moment. I actually made a matcha green tea chiffon cake out of your chocolate chiffon cake recipe. I just substituted the cocoa powder with green tea powder, and the coffee with just plain water. I was wondering, could I do the same thing with your recipe for chocolate cupcakes? Using the same amounts of ingredients and just substituting the cocoa powder with green tea powder, and the boiling water with just plain water?

+Ralph Pollandt That's a tough question to answer. I think it's more about texture as I like the flavor of both. This chocolate butter cake has a more dense texture than the simple chocolate cake which is light and moist.

You can store it at room temperature but it won't hold as long.
