When I was a little girl, the old general store always had a gallon of pickled eggs on the counter. I can’t remember how much each was, but they were so good. It was such a treat. For easy pealed FRESH eggs 1) Put room temp eggs in rolling boiling water. 2) Boil for 15 min.
    3) Place eggs in bowl of water and ice cubes. 4) crack shell by rolling on counter under palm pressure.
    5) remove crushed shell under running water. EZ to peal, no egg damage.

Here's a couple tips for easy shelling of fresh eggs. Put a fresh lemon sliced in the lot with the eggs. I have used dehydrated lemon sliced or lemon juice sometimes. Continue cooking like you do. The instead of cracking the eggs simply lay them down and roll them like you would a lemon or orange to get juice. Much easier peeling. Hope you try it. Love you folks!!! Thank you for keeping up our morale during these times.

Great video guys… just a tip from one friend to another… Farm fresh eggs can sit on your counter for three months as long as they are clean and not washed… when the hen lays the egg; that wet coating naturally protects for more of an extended period of time compared to store bought eggs that are washed, beached, and in some cases inked… if you want a perfect egg without mangelling the egg when pealing; just use eggs that are a couple of weeks old… love your dogs.. Yah Bless!

Just an option.... I splash some vinegar in the water when I put the eggs in with cold water and bring them to a rolling boil for a minute before I cover them and turn off the heat. They finish cooking in about 10-minutes. After they're done, I run cold water on them then shake them in the pan and watch them dance in the mosh pit and get all cracked up. What makes it easy for me is to peel them under running cold water.
I guess everybody has their own way.

We get fresh eggs from our neighbor. I get them unwashed and unrefrigerated. We leave them on the counter and wash them as needed. I found the ones left on the counter peel so much easier than once they've been refrigerated. I put my eggs in the pot of cold water with salt (have used baking soda too), and once boiling, let boil for 10 minutes. Then I put a lid on the pot and set it aside for 15 minutes. I then drain and add cold water. I peel them under a very small stream of running cold water, and they are perfect! I love pickled eggs and can't wait to try this recipe.

My sister made homemade apple cider vinegar from a friend's apple trees last fall, it's in a 5 gallon bucket and now has a giant mother on the top. It will last us a long long time and it was extremely cheap to make. We threw some braggs apple cider vinegar in the batch when we started it. It acts as a starter for the mother. I'm going to try this pickled egg recipe, thanks for sharing.

🙋‍♀️experienced chef here, there are several things that help with peeling eggs. 1. Don’t use fresh eggs the membrane starts to break down as they age. 2. Changing the ph in either direction, so baking soda or vinegar in the water. I prefer vinegar as baking soda can cause the eggs to take on a sulfur smell. 3. Shock the eggs in ice water. The colder the better. 4. Steaming eggs works great.

    • @carpii
      @carpii 3 роки тому +3

Theres so many old wives tales about making eggs easy to peel, but adding anything to the water doesn’t do anything. Theres just not enough time for anything to penetrate the shell.
When people talk about pH, it’s actually the pH of the egg internal that matters, which should be above 9 (alkaline) for easy peeling.
So how do you do that? The answer is to simply use older eggs.. their pH increase naturally over time as the egg loses moisture, then shock them in cold water. Steaming does help, since it results equal heat on all surfaces.

That's what I do and I rarely have a problem (I use two 4 oz. Anchor Hocking bowls with the scalloped edge, one on top of the other and gently shake until the egg(s) is evenly cracked all over). The shaking also helps to release the membrane so that the peel literally slides off with a gentle push between the white of the egg and the shell.

Tap your fresh eggs with a spoon until you hear a little crack sound. It actually sounds like you put a crack in your egg. Then boil your eggs and they will peel really nice. Nonna Grace demonstrated this in one of here videos. I use this method with my fresh eggs. It works every time.

Yes! Also breaking the membrane before boiling makes them come off so easy. Gently popping the blunt end with a spoon works and it is a complete game changer.

Loved watching this video, a happy cheerful family and put a big smile on my face thanks. I'm definitely trying this recipe, and looking forward to it. Something to share in return....I have a hard time shelling eggs, and always have done; I've tried all the tricks, and none work all the time....well, until I bought an egg steamer. Steam your eggs for ten minutes, let them cool, and they'll peel so easily, you'll never boil them again.

So love y'all, Thank you for the recipe!! I watched a commercial boiled egg producer make the best boiled eggs.
He put the eggs directly into the boiling water for 14 minutes then he put them in cold water to chill. They sat for about 5 minutes in the cold water then peeled them with a machine, IKR!!
They came out perfectly for him and he does millions of eggs a year.
So I tried it and GUESS WHAT???!!!! it works perfectly !!!!!! give it a try and you will never go back to the other method and your patience will not be tried! HalleluYAH!!!
    Hv a great day!!

I love this video so much because back then it inspired me so much I picked 3 gallons of eggs. Yep I said 3 gallons. I made them in half gallon jars and used different seasonings of each one. I did make this particular one that you made except I used the Dragon Cayenne peppers and put in a half tsp Mustard seeds. LET ME TELL YOU JUST HOW YUMMY THOSE THINGS WERE. OH MY WORD!!! And I do love those Tijuana Mama picked sausages. Lol oh gosh my mouth is watering right now.
I love looking back at your older videos and seeing your animals and your garden. I know it's your lives but it's great memories for us too. 🤩

I'm 20 year powerlifter. Boiled so many eggs its not even countable. A HUGE secret I tell my buddies is bring the water to a simmer. Put the egg in and you will see tiny bubbles coming from the shell. That's the shell separating from the egg itself. Instantly peels in 2 pieces when its done. You guys are SOOOO cute together..

Put a pin hole in top of eggs and steam them. Crack the top half first and run them on counter or sink to crack the shell. Peel from the top gently mashing the shell. I'm 70 and just learned all of this the last few weeks.

people always say put this or put that to make the shells come off... Perfect eggs every time- bring enough water to a boil that will cover all your eggs plus an extra inch of water. Take your eggs directly out of the fridge don't leave em out at room temp... Once boiling add your eggs very carefully so as not to crack any. Boil for 13-14 mins. Drain and run cold water on them for one min. Follow with an ice bath for a few mins. They will slide out of the shell very easily and will be done in seconds. I swear in the last few weeks I've made 100+ hardboiled eggs for pickling and this method works perfectly.

Best secret for pealing fresh eggs - tap each egg at the fat end till it "pops." It will make a sound like it cracked, but it doesn't. Tap gently, till you ear it. Then cook as you said. The shells will almost fall off!

Y’all you need to put your eggs in the cold water and leave them with the shell cracked before you start to peel. The water gets up under the cracked shell making it easy to peel them. I also have a backyard flock. Try it it helps so much. I also use vinegar in the water when I cook them.

I found with fresh or old eggs peel easily when they are cooled down with cold water completely and as quickly as possible immediately when done cooking. Peel them wet or in water after they are fully cooled. No salt or vinegar is needed but they don't hurt if you insist, I don't use anything. Once I started cooling the eggs down in cold water with or without ice I stopped having peeling issues when peeling.

I have a quick question. Should I cook my eggs for less time (so soft-ish in the center) so they don't get overcooked when putting in the cooked brine?
Also, Instant pot is TOTALLY worth it y'all (yeah I say y'all because I'm from NC LOL!). I hard boiled 30 eggs in 24 minutes! They peeled like a dream! I was so floored. Definitely a worthy purchase for sure. ;)

Rapid boil for 12-15 mins depending on the number of eggs. Then run them under cool tap water a few times. Then let them sit in the cool water for 10 mins. The shells will just slide right off. I make boiled eggs about 5 times a week. Letting them cook in just hot water after the boil ruins the lining between the egg and the shell. Makes it stick. Just cook them the whole time in the boiling water. Then flash cool them. Telling ya it works
