- Strawberry Swiss Roll - a delicate refreshing cake perfect for warm days of spring and summer. It is very easy to prepare and looks totally impressive not to mention it has an incredible flavor and completely melts in your mouth.

Ingredients
Makes about 10-12 servings
Cake
3/4 cup (95g) all-purpose flour
1 tsp (4g) baking powder
1/2 tsp (2g) salt
4 eggs
3/4 cup (150g) sugar
1 tsp (5g) vanilla extract
2 tbsp (28g) vegetable oil, like canola oil, etc
Strawberry Jam Filling
10 oz (300g) strawberries, cut into smaller pieces
1/4 cup (50g) sugar
1 tbsp (15ml) water
Cream Cheese Filling
9 oz (250g) cream cheese, room temperature
1 cup (240g) whipping cream, chilled
1/2 cup (60g) powdered sugar
1 tsp (5g) vanilla extract
For dusting
Powdered sugar
1. Prepare the strawberry jam filling. In a small saucepan put the strawberries, sugar and water. Bring to a simmer, stirring occasionally. Press the strawberries with the back of the spoon to speed up the process. Simmer until the mixture is thick, for about 15-20 minutes. Remove from heat and let cool completely before using.
2. Prepare the cake. Preheat the oven to 350F (180C). Butter a 12X16 inch (30x40 cm) baking tray and line it with parchment paper.
3. In a medium bowl whisk flour with baking powder and salt. Set aside.
4. In a large bowl add eggs, sugar and vanilla extract. Beat with an electric mixer until lemon yellow and foamy. Add oil and mix until well incorporated. Gradually add flour mixture.
5. Pour the batter into the prepared baking tray and spread evenly into the corners using the back of the spatula.
6. Bake for 12-15 minutes until a toothpick inserted into the center comes out clean. Take a kitchen towel and generously sprinkle with powdered sugar. This helps the cake not stick to the towel. Flip the cake over the towel. Remove the parchment paper and dust with powdered sugar.
7. While still hot roll the cake up in the towel. You will have to do it while is still hot/warm otherwise it cracks. Let cool completely.
8. Prepare the cream cheese filling. In a bowl, beat cream cheese with powdered sugar and vanilla. In another bowl whip the cream with an electric mixer until it forms stiff peaks. Fold together.
9. Unroll the cake and spread the strawberry filling evenly over the cake.
10. Spread the cream cheese filling on top of the strawberry filling.
11. Roll the cake back up. Refrigerate for at least 1 hour before serving.
12. Sprinkle with more powdered sugar before serving and decorate with fresh strawberries.

I made this and it came out soooo delicious, it was not over powering with sweetness which to me is good, it had a natural strawberry flavor, i would recommend to use 3 Tbs water+ 1 Tbs cornstarch mixed as a slush to help thicken your purée, u can also substitute a strawberry pie filling as your purée!!!❤️

absolutely loved this recipe! We have made it for everyone of my family members that visit, it is a bit hard and takes a while but is definitely worth the effort! Whenever i make it within 2 days its gone ad my family is begging for more! Love this recipe!

I just started baking and I wanted to try this because it looked amazing. After quite a bit of sweat and praying, I finally finished this recipe and it was lovely. There was a nice contrast between the sweet cream cheese and the sugary tart flavor of the jam. At first, I thought that it was going to be too sweet because there is sugar added to all of the components (fillings, cake, and outer decoration) but the cake was fluffy and light which balanced the sweetness very nicely. Thanks for this video!

I tried this cake today. It was sooo good. Everyone loved it . But my cake pan was smaller than the one used in video. So it was thick and had cracks. I covered the cracks with whipped cream rosettes. Turned out beautiful and tasted soo good😍.

This was a success. I tried it but I made the strawberry sauce without sugar since I don't like sugar that much.
Then I used whipping cream instead of cream cheese, and chopped white chocolate, then I mixed it with the cream.
I must say that the roll came out very soft, moist and yet it didn't break! I will definitely do it again.
So many ways to make strawberry short cake. some use angle food, some use twinkies, some use donuts that what i use DONUTS I like it fast and easy. dolly madison zingers , swiss rolls all sorts of things Most of the time 1 donut loaded with strawberries, juice and whip cream will fill ya up MOST OF THE TIME i use the chocolate cover donuts most of the time or plain glaze>>> THIS LOOKS AWESOME TO ME YUM

best swiss roll recipe ever. tried it many times. I add a lemon juice to the strawberry and it tastes so delicious. The taste otf strawberries and lemon is heavenly. And I use creme Chantilly instead

Tried this out with cake flour and the base turned out great! I also ended up using little sweet jelly bits mixed into the filling instead of jam.

I made this today. My only advice to anyone who wants to make it is BE CAREFUL when you put the cake pan in the oven not to tilt it even slightly.
My cake was too thin on one side and burned 😂 I had to cut the burned part and continued with 3/4 of the cake.
It turned out good tho looked amazing and tasted great.

Hey, use a run tea towel under cold water and wring it as dry as you can, then dust it with sugar as displayed in the video. This way you actually have a cooler surface to roll with, so it doesn't feel too hot.
