Moustokouloura: Greek Vegan Cookies

Ingredients
4 cups (615 grams) all purpose flour
1 and 1/2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoons ground cloves
3/4 cup light olive oil
1/4 cup orange juice
1 cup grape molasses (Petimezi)
1/2 cup honey
optional: 1/2 cup- 1 cup raisins
Instructions
Preheat the oven to 350 °F, 180 °C.
Tip: measure the oil in the measuring cup first and then measure the honey. This will keep the honey from sticking to the cup.
In the bowl of a tabletop mixer that has been fitted with the paddle attachment, combine the oil, grape molasses, honey, and orange juice. Whisk them together.
Combine the flour, salt, baking powder, baking soda, cinnamon, and cloves together in a large bowl and whisk them together.
Turn the mixer on low speed and add the flour mixture in a few batches until everything is combined. Overmixing will cause the oil to separate from the cookie batter. Add the raisins, if using and mix until incorporated.
Transfer the mixture to a clean work surface and cover it with a kitchen towel for 15-20 minutes. This will make the cookies easy to roll out.
Separate the dough into 30 pieces.
Lightly grease the work surface with some oil.
Roll out each portion of dough into a 6-inch long rope. Either join the two ends to form a ring or roll it into a spiral.
Place them on baking trays that have been lined with parchment paper and bake on the center rack for 10-15 minutes. Baking them longer makes them less soft and chewy and more crisp.
Allow the cookies to cool and then serve with coffee.
Store the cookies in an airtight container for up to a month.

These are similar to an Italian cookie my grandmother from Calabria used to make for my grandfather. She made them in the shape of an "S" just oil, cinnamon, flour and eggs.

dimitria i just love watching your cooking show. but I have a question. Could you make these cookies with gluten free flour and dates which could be processed in a food processor
instead of the molasses? I know honey is good but I am also diabetic was wondering if I could use splenda or as I asked gluten free flour? If you find that you can make it with this could you do a video? please and thankyou. God Bless.

Actually, you are correct, they are not vegan if honey is being used.
Yes, you're right. They're not vegan if they contain honey. I keep forgetting that ....But, it can easily be substituted with maple syrup :)

@@user_2772-x4u the brown sugar will make them tender and soft but with a bit of a crunch. It took me about 4 tries until I got it right. Traditionally moustokouloura are soft. Good luck

I tried this recipe twice one time using cups and today weighing flour. First time was much better and came out as yours. This time the flour was too much and was dry so I added about half a cup more of olive oil to get the same consistency as the first time. I weighed 4 cups of flour on the scale and it was about 512 grams instead of 615 g in the recipe. May be this is why it came out dry and dense. Want to know your opinion.Thanks Demitria.
Hello Dimitra can we make this moustokouloura with whole wheat flour?
I have not tried that but I think that whole wheat flour would be good. Maybe substitute half of the all-purpose for whole wheat and let me know how they turn out? All the best and enjoy!

Yes, the glycemic index will be very high because of the flour and molasses combination.
