Turkish Buttered Pide Recipe! Eat it with Doner, Shawarma, Hummus, Your Sandwiches and Everything!

  • Around 10 months ago, in our first döner video, we used this flatbread to make the döner sandwich. Ever since then, you’ve been asking for the recipe! Today, we are making that bread with Burak (a.k.a bread man). You may use the bread for döner or make a delicious sandwich like I did in the video. Even on its own, it will blow your mind! 😍

    200 gr all-purpose flour
    120 ml water, lukewarm
    2 tablespoons butter (50 gr)
    1 teaspoon dry yeast
    A pinch of sugar
    1 heaped teaspoon salt
    1 egg
    1 teaspoon sesame seeds
    1 teaspoon nigella seeds
    For the sandwich,
    4 tablespoons cream cheese
    40 g Manyas cheese, diced (you can use parmesan or any other aged cheese)
    5 slices smoked and cured meat (any kind of cured meat would do great)
    2 pickled cucumbers, diced
    Baby lettuce leaves
    A pinch of black pepper
    A pinch of red pepper
    Chips
    • Preheat your oven on upper and lower heat, without fan to 280 C (536 F). If you have a baking stone, place it into the bottom of your oven. You can use a cast iron pan instead of baking stone.
    • Mix the water and yeast in a cup and add the sugar. Let the mixture sit for 5 minutes.
    • Meanwhile, melt the butter and let it cool down. Butter shouldn’t be hot while adding it into the dough.
    • Mix the flour and salt in a large bowl. Add in the melted butter and yeast.
    • Mix and knead the dough for about 6 minutes until you have smooth and elastic dough.
    • Rub the dough and the bowl with oil and cover with a damped kitchen cloth. Let the dough rise for 40-45 minutes at room temperature.
    • After rising, transfer the dough on your counter and divide into two equal balls.
    • Dust your work surface with flour and flatten the balls. Shape them into 15-20 cm (4-8 in) rounds with your hands. You can use a rolling pin for shaping as well.
    • Dust your wooden cutting board with flour and place the shaped dough on it. Cover with a kitchen cloth and let it proof for 15 minutes.
    • Beat the egg and brush on top of the dough. Sprinkle the sesame seeds and nigella seeds.
    • Slide the dough from the peel onto the baking stone, which is already hot, and bake for 11-12 minutes.
    • Take out the bread and let it rest on a cooling rack for 5 minutes. Voila! Your crunchy outside, soft and warm inside is ready.
    • To make the mind-blowing sandwich, halve the bread and spread it with 2 tablespoons cream cheese.
    • Mix the rest of the cream cheese with 3 tablespoons of pickle juice. Add in the Manyas cheese, black pepper and red pepper. Give it a last mix.
    • Layer over the cured meat slices, cream cheese mixture, pickles and lettuce.
    • Crumble some chips and pop the other half of the bread on top. You can spread some more cream cheese on the sides of the sandwich and dip it into the chip crumble!

    My family is Greek. My mother was born and raised in Istanbul, she left when she married at 26. Now she’s 82. We both enjoy your channel. We have excellent Turkish restaurants in New York City but not one that I know of has the one thing she misses so much. Tavuk Gogsu, the traditional one with chicken. I hope one day you will show this recipe.

    My grandkids are coming and I will make this with my grandson, age 5. He loves to bake. His mama loves pickles so there is much to share from your videos. Thank you for every one of your videos. Winter here in Alaska is windy and cold, so warm bread and making things from scratch is necessary as there is so little world food in our part of the state. Blessins!!

    10 years ago I ate a doner in a shop in Germany and I fell in love with Turkish food. I kept trying to explain the sandwich to everyone and the best I had was, "it's like a kabob but with a slaw and on this really good bread, not naan." NOW I CAN MAKE IT!

    I love everything you make my father used to make it the way you do, I'm originally from Serbia but grew up in bosnia and now live in America but until by accident I searched for a recepi that I had in Istanbul ( shopping with my mom) I didn't even know about you.       Refika, It would be practical and useful, if you mention in your video how many servings there are in the quantity of raw products you are using in your demonstration. For example, how many breads you get from 200 grams flour. Thank you!

      Hi :-) What you‘re asking for with yufka is probably lavaş in Turkish. In German-speaking countries thy call lavaş yufka. Yufka is a super thin layer of dough - much like filo dough. So if you ask sb to make yufka you’d not be able to put döner in it. Or you could and you’d get börek with döner inside ;-)

    First of all...a great thanks to Refika and the whole team behind .
    I visited first time Istanbul in 2005 and since then i discovered all the Turkey travelling all around and definitely falling in love with all turkish people and turkish landscape ( a special place in my heart for Kurdistan).
    So i could discover and love turkish cooking ( which in some way is close to Italian cooking). Your channel has let me the possibility to trying at home some of turkish delicacy...so ...thank you again. In my next travel to Istanbul maybe we could meet and share some secret and some recipe of our tradition.

      @@basmagad2560 yes. You need to use a jagged edge knife of you can take it out of freezer and after 5-10mins it will cut easy

    Depending on your oven you should not place anything on the very bottom. Most ovens have a heating element below the bottom and that could overheat if you place something on the bottom of the oven. Check your oven's manual whether you can place something on the bottom or if in doubt simply put the tray on the lowest rack.

    Rafika, this guy has some real magic. This bread looks so soft and tasty and I wish I could get this soft bread with doner kebab. The smoke in the inside part of the bread watered my mouth.
    Rafika, we once visited Antalya and there was the beautiful looking turkish salad with lots of vegetables cut and Tahini sauce. I would request you to teach me this. Its been long since me and my wife are missing that fresh salad.

    Congratulations of reaching so many subscribers so quickly, hope your channel continues to grow.
    One of my favourite things when in Turkey was the bread sold in the glass cases outside shops there. Always seemed so fresh and tasty.

    You bring back so many happy memories of Istanbul. I have been there in the Winter when it snowed and walking in the evening with the aroma of wood burning stoves, it was heaven.

    Today I am watching this on December 31, 2021. I am thinking of the people in Istanbul and other areas who experienced the storms last month. I am in the US. I pray that you lovely people are safe, warm, and blessed by God. Watching these videos has made me want to be in prayer for this little “family” in Refika’s kitchen…I’m going to continue watching the clips and praying for you. May the Lord bless you.
