Please do snails. My Aunt made the lil black ones with red sauce. Sat with a bowl and pin, picking them out of the shell. Love escarole anyway you make it. With the Eve and 7 fishes feast, I make escarole fugada (?). Kalamata olives, anchovies capers, steam in chicken stock and red wine. Try it.

Do you remove the membrane from the pork ribs? It didn't look like it in the video. The membrane can be chewy or rubbery and prevents seasonings and sauce from penetrating the underside of the ribs. Regards, Chris - a huge fan from SI.

That pot was actually purchased over 20 years ago when Jack & Dom first opened the Daddy Jack’s Fort Worth location.
