Hey there, Thomas - I've actually tried starching this recipe, but honestly, I'm not a fan of saucy taco meat. The sear is really just for a little extra flavor and to kick start the spices; and the additional liquid actually slows the cooking down enough that the meat doesn't get gummy; almost like a mini-braise (I'm not a fan of over-cooked ground beef either). I also like to go with an 85% lean beef and forget about draining off the fat for a richer flavor. Try it if you don't believe me!
I've been watching several taco diy video's. although I will try out the seasoning (without cilantro) I will also use avocado and sour cream and no cheese. but thanks for the seasoning tip!😃👍

The beer was not necessarily needed, you made a perfect excuse to pop one open. 😋. I put my cheese right on the hot beef too, I like the meltingness. If that's a word. I would like to suggest adding powdered Chile new Mexico along with 3 Chile arbol and the Pasilla powder. Let it simmer for 1/2 hour on low and enjoy!!!!

I always use ground Chuck it has less fat I cook the meat first then put the meat in a strainer until the grease is drained I also will take the skillet and give it a quick wash to remove the grease return the meat to the skillet and then I will put my seasoning in along with a little bit of warm water stir it and let it simmer until the liquid has just about evaporated I keep just a little bit of the liquid to keep the meat moist and I make my own salsa it's very easy and quick to do I don't use the package shredded cheese it has wax in along some more crap in it I grate my own that I get from the cheese store Monterey Jack queso quesadilla asadero mild cheddar

If anyone is interested, If you like that super fine grind on your taco meat just cook your beef in water. Yup, water. Add your meat to the pan, crumble it down and spread it out like you normally would, toss in your seasonings, and cover the meat with water, make that shit swim in it people. Smash your meat around so it look likes mashed tators. Don't drain it at all, just let the water cook off. As you stir it around till the meat is cooked you will get that nice, fine texture you love so much when you stop by a Taco Bell.
The seasoning is good, but the method I have some issues with. You need some kind of starch in the seasoning to make the liquid and seasoning come together into a sauce. Simply evaporating the extra moisture off leaves the meat gummy and dry. Normally I'm also inclined to sear everything, but with ground beef I don't see the point. Try steak tacos if that's a flavor you want to play with, ground meats don't sear well.

It might be the variety of spices you're using; either the brand of paprika or chile powder. Personally, I dig smoked paprika and ancho chile powder for my taco seasoning. Glad you like the recipe! :)
+Terrell Smith You can certainly mix up the spices a bit if you keep to the same ratios. I've actually used this seasoning on grilled chicken breast and fish; so if that's your taste, go for it!
I've used tomato sauce before when I was out of beer :-o Works if you like your taco beef a little saucier. Might need a pinch more salt and (maybe) a splash of vinegar to balance it out before serving. Enjoy! :)

+Jason HD You might have to fry your own if they're unavailable. If the thought of shaping a tortilla into that taco shell shape seems a bit much, corn tortillas fried flat and crispy are also good to load with toppings - that's a tostada!
I'm Mexican and I absolutely approve with this recipe. I also mix my own spices. Don't use packets or bouillon powder stuff. This made me happy 😊

you can use water, canned tomatoes or tomato sauce, beef broth or really any liquid
where did that package go when you threw it back at 1:29?
My tip: use smoked paprika instead of regular.
1 tsp ancho chile powder
1 tsp onion powder
1 tsp paprika
1 tsp Kosher salt
1/2 tsp cumin ground
1/2 tsp garlic powder
1/2 tsp Mexican oregano (Regular oregano will do too.)
1/2 tsp coriander ground
1/4 tsp black pepper (About 10 or so turns of the mill.)

No, there are fat soluble flavors in the spices that need the fat. Better to cook all the way to the end and drain the fat at the end.
