I've never ever worked with leather green as z frog. Is The reason you don't Go allway through material Like some so As One side has a different appearance awle opposed to punch?
The way that the blue thread was made to go under the red thread (by looping the red thread over the blue thread) is absolutely the correct way to proceed, and actually DOES create a half-granny knot which is hidden unseen inside hole, and makes the stitching much more snug and loosen-resistant as you proceed. (It is the half-knot that actually makes the thread leave the holes at the desired angles.) Notice that the back side of the stitching is rather straight and not particularly in a Z pattern, even though the sewing symmetric on both sides. (If a proper Z pattern is desired on both sides, then naturally the Z-pattern pricking iron or chisel should be used on both sides.)
Because these are pricking iron as opposed to stitching chisels. The tines on the pricking iron are much finer, so the leave a smaller cut in the leather that is meant to be used as a guide for the diamond awl. The awl will then easily cut through the leather and finish the hole with out stretching out the leather as much. if you used the pricking irons to make the full hole, you would run the risk of snapping the tines off over time because the are so thin.

I have one question, since I have been sewing on a gray machine for years, I have learned that the smaller the number, the thicker the thread and vice versa... I'm interested in hand sewing thread, for example, is 0.55 thread thicker than 0.8mm thread? and what is the equivalent of, for example, thread 0.6 mm, is it similar to thread 10 for sewing on a sewing machine, or is it an approximate thickness? sorry for the long question..

If you play it double speed it's watchable, otherwise it's a great sedative...either way
