    Got a flat iron steak once. One of the few ive cooked myself. Was one if the best steaks ive ever had. Brown on the outside, pink on the inside, red in the middle. Beautiful

    I’m from London and there’s a chain of restaurants called flat iron all they serve is the flat iron cut it’s so good, been there many times and it’s got like 7 restaurants in London now

    My favorite steak to cook with. It doesn't get tough and chewy in stew. Delicious in stir fry. I buy these when we camp, I cut them into hotdog sized strips and marinate them. Then we cook them over the fire like hotdogs and eat them like cave people. They do stay juicy even at well done so they work well for everyone. My favorite only beaten by the ribeye cap.

    I also find it useful to bring out my meat tenderizer or marinate for a few hours. In fact, I often do both just using the tenderizer and then bagging the steak with some chopped onions overnight. These in part flavor and also help break down some of the fibers.

      Butcher here. Gonna go right ahead and say Jamie Oliver doesn't know his shit. Filet, I'll definitely agree with, because it's a crap cut. Not much fat, if any, so no flavor. Tomahawk (ribeye) is far superior to any other cut if you have the money. Best fat distribution, good flavor in the meat. If you cook and cut right, doesn't get any better. Granted, a tomahawk is just a standing rib roast with extra bone. Great piece of meat, but your wasting money. Get a regular bone in ribeye or rib roast, and you get a little discount. That said, flat iron is probably one of the most OVERrated steaks out there. Pretty much just good for burger. It's just a piece of the chuck. Don't get me wrong, chuck is the best for flavor and texture. That said, just get a chuck steak or a chuck eye steak. The latter is almost identical to a ribeye (where the rib loin ends, the chuck begins), and usually only about two thirds of the cost. Side note, I'd put tri top (part of the sirloin primal) in the same boat as the flat iron. Super overrated, and has to be very specifically cooked and sliced. Just get a regular sirloin (full sirloin if you can find it). Better quality at a reasonable price. They have too much extra labor cost for the overrated ones. Actually making it worth more than the quality dictates. Plus, the chuck, rib, and sirloin primals are all great as far as flavor, tenderness, and marbling. Above all else though, whatever you buy, don't get a damn tenderloin. Only thing it has going is that it's soft. New York strip and porterhouse/T-Bone are also BS. All from the same primal that could be easily ignored.

    Flat iron is by far my favorite cut. Don’t even need to reverse sear, just sear for 4.5 minutes a side.

    There are restaurants called the flat iron and they are 5/5 cheap. They give you free ice cream after you finish your meal and the way you get it is by puting a little knife (not sharp) token into a a coin dispenser.they serve the flat iron steack for £15

    London broil dry brined for a day and reverse seared on a smoker with apple wood has become one of my favorites as of late. Find the thickest ones you can after dry brined olive oil with garlic powder and black pepper. Served on rice. Yum

    Actually in Holland we usually make stew out of the featherblade, because it's more tender than other kinds of stew meats. We usually use the perpendicular cut of the flat iron with the seam still in the middle.

    Absolutely the best cut. Super tender without being mushy the way filet mignon can sometimes be, with as much flavor as the tougher cuts.
    I coat it in salt, pepper and minced garlic, let it sit for 45 minutes at room temp before searing 4-6 minutes per side. Even great the next day sliced cold on a salad or cubed and seared off for stirfry.

    fun fact: A flat iron steak is the specialty dish on the former Southern Pacific Coast Daylight service. Amtrak still serves it for sleeper car passengers on the Coast Starlight which follows the same route.

    The best, cheap, cut for grilling is the "onglet" (hanger steak in English, I think). It's tender, very tasty, and it takes marinade like a champ. Look for "onglet gascon", with a bone marrow sauce.

    Been cooking a flat iron steak for about 12 year since I found them...
    Used to get them for $3.99/lb. Second most tender cut after the tenderloin. But so much flavor.

    Used to get the entire blade arm with chucks. They made awesome arm roasts. Tastes so much better than the chuck roast, and way more tender (except for that center gristle of course).

    I cooked the flatiron at cookouts for years and had a reputation as a steak boss with my family. It's the easiest steak to put on the grill. Let it rest for 10-15 minutes after cooking and you can't lose

    My Mom makes flat irons every now and then and I have to agree that it is probably one of the best pieces of meat I’ve ever had. Especially with the seasonings she uses. Plus they’re not super overpriced either, so it’s really a win-win.

    Hanging Tenders aka Feather 🪶 Steak is actually the most misunderstood. Super tender & flavorful, it’s job is supporting the kidneys, so they aren’t a muscle that’s bearing great strain or weight. Hard to find but worth the hunt
