Hiya, the knitting was fantastic and these ganseys are over 80 years old! Worsted spun yarn doesn't pill and fluff like woollen spun. All ganseys were made will Worsted spun. Hope this helps! xxx

Clothing throughout history used gussets to provide ease of movement in all sorts of garments, so it makes sense to add them into knitwear, especially in simply constructed garments. Modern patterns have a lot of shaping maybe not used in older styles of knitting, so the use of gussets translates well.
There is a theory that the Gansey was inspired by the working smocks of farm labourers! They needed that movement to be able to haul nets etc. Fashion designers and sportswear designers love gussets and ganseys for exactly these reasons. xxxxx
