- In this episode of How-To, Gabriel Pryce-head chef at Rita's in East London-teaches us how to make three-chili squid. Combine an ancho chili mayo with fresh red chili salad and house-made chipotle oil for a grilled squid dish you can even make while hungover.

DajaWaja if you did that with squid it would be on the heat too long and burn. with other proteins "a la plancha" you would let them get very much darker.

Pasteurised egg? Pomace oil? Fucking disgusting.
You don't eat mayo with oil? Pomace is a little more acidic than olive but that's a common mixture. Pasteurized eggs are used to make homemade mayonnaise, and mayo is the base for so many sauces(aiolis, remoulade, fry sauce, tartar sauce). This is good cooking
LoopKC Pomace is industrial waste as far as I'm concerned. He is using pasteurised eggs because they come in a carton not because you need them to make mayonnaise.
