About 20 Euro's a kilo is the general price when buying it in the super market. She's working in a professional kitchen, so for her, prices are bulk anyway.

I find cooking bacon in the oven WAY better than a pan, it turns out more evenly cooked, doesn't curl and you don't have to constantly watch it and flip it.
Nothing wrong with the technique, It's the execution. The bacon did not look fully cooked.
I think that's just your personal preference there. Some people prefer their bacon well done and very crispy, others prefer it where it's more resembling ham, but a bit more flavoursome. It's still perfectly safe to eat, and I'd presume when ordering you can ask for the bacon to be cooked a bit more.
proper lad Absolutely it's a preference thing. In the US most places serve it somewhere in the middle. Crispy, but still a little bit of chew.

I don't know where you people are buying bread crumbs, but It's about $3 for 24oz of the deli made kind where I live. Also, there's 3 ingredients in it- bread, parsley and parm; and it lasts me 6 months...and most of the time, I don't have 3 cubic yards of stale bread lying around my kitchen.
