Hello Marion. I am a big fan of "Sintyiau" Squids. Now, we have in town one very nice Asian lady, my good friend. I told her what I was doing, and she asked me right away, how many times I fried the squids. I said once. She told me, " Oh my friend. try to fry it twice, the first time, then pull it all out, have patience and deep it again for a minute or two. Then is done. It will be much more crispy. I have tried, and what a different!! Very good advice. Thank you, Grandma.
you are really a genius Marion....... this dish is difficult because you cannot bring lot of flavour in it using the flour only, which most of the cooks do....... the modification you did after frying to infused the flavors into this dish is the USP......... this is really outstanding and reflection of your super talent......

I love your channel. I am a diabetic and I control the disease through low carb diet. I am constantly searching for low carb alternatives to recipies and UA-cam is my almost exclusive resource for those searches. Sometimes I am dismayed at the carboloads that are added to naturally healthy low carb foods and ingredients. I therefore try to imagine how dishes would turn out as the result of decarbing them. I would encourage all chefs to begin to include more of this kind of information for their viewers. I would be so pleased if some of my favorite online chefs would follow this new trend. Certain ones do and they are gaining much in populatity and credibility. Thanks again for this dish it is one that I found easy to adapt for the low carb life that I must now lead.
Marion, you can kick the quality of your salt-mix up a few notches by roasting the spices IN the salt before grinding, rather than grinding the roast spices with “raw” salt. Trust me, it makes a big difference.

Can't wait to make this. My fiancé and I have been enjoying Salt and Pepper shrimp once a week, and I have some beautiful squid in the freezer that will be perfect for this dish. I was toying with the idea of doing Sichuan squid with the peppercorns, but this will satisfy both!
We made this tonight at our place. My husband cleaned the squid and prepared it as shown by you Marion. We watched the whole video as we prepared it. I did the roasting of the peppercorns and cooked the squid. OMG! It was so good....will make again for all the family now. Just wondered whether it could be prepared for a crowd at a party etc . Loved this recipe and have saved some of that salt and pepper spice in a jar to make again. Thanks Marion......your recipes always work and you are an excellent teacher too. Marie and Colin

Ive tried quite a few of your dishes (mongolian beef, singapore chilli prawns, fish & chip, sweet & sour chicken, honey eggplant) they all are THE BOMB!! Super dooper yummilicious!! However for this recipe, I just tried this today for lunch, it tasted very bland. Squid is hard to cook because u need to get every flavour of each of the squid inside out. For this one, you can only taste the outside and as u chew more, its just bland. Im sorry for the negative review for this dish marion. But keep up the great work! I love uuuuuuu! You're humble and I love how you describe the flavors down to the last bit because for us, your viewers, it would be a bit difficult to understand how it tastes with just looking at it. Not to compare but I am a huge fan of your channel and of course, Donna Hay. But yours is quite different because there's that Asian Kick I can relate to, especially your Chicken Adobo. After watching this I bought the peppercorns now I have to buy the mortar and pestle to grind the peppercorns and some squid. Next I will make salt and pepper fried golf shrimp! I had this a year ago at my favorite Chinese restaurant in Florida.

I learned a tip to tenderize calamari is to marinate in buttermilk… does the sichuan pepper do the same?
Season with cornstarch instead of flour. Much crispier n lighter.
Is there any way to grind the spices without a mortar and pestle? Thanks!
