Stainless steel thinner than 0.005"is easily distorted with the harder carbon alloys cracking. - Use the lightest pressure possible when forming the apex. - Cracked carbon crystals lead to chipped cutting edges. - Under a microscope I have seen a chip separating ( partially broke off but still hanging on) during the process of sharpening with diamond plates.
