Behind the Scenes: My Knife Sharpening Setup at Brooks Hall Farmers Market | The Perfect Blade
I was using a pitcher for cooling before as well I just switched to a drywall mud holder and it's great. If you happen to come across one that's 12" or 14" at a thrift store it s worth picking up.
@@gregmccormack5709 great advise! I have only sitting on a shelf that i see everyday 😂. Will be using tomorrow.
Now that is a nice setup!
Thank You !!! Happy New Year!
That arc is typical not just because of the bolster but also because even if you push down at the handle with constant pressure when pulling, the pressure at the tip of the knife will be a lot less. It´s just impossible to use a pull through sharpener without causing damage in the long run.
Is the belt moving towards or away from the knife edge?
on abrasive belts they are moving toward me " Edge Leading". All the wheels are moving away. Thank you for your question.
Ooooh you dont know my uncle, good sir! Sharp knife though!
😂 Touché! Sounds like your uncle might give my knife a run for its money!
Whats the low speed polisher? Ive been looking for one for ages but I cant find any in 220v :(
It's a Bucktool low speed 6". 110 v though.
I agree, paper cutting, shaving hair on the arm (which in alot of cases is scraping, not shaving) and BESS tests have become "proof" that a knife is sharp. All of them are really good tools to use for yourself in my opinion. The paper is good for feeling the knife, hearing what it sounds like and looking at the cut it leaves behind to see whats going on. Shaving only really counts when the hairs pop off, not when people scrape it off and especially when they have to wet the hairs before it can grab. BESS is a really good comparative test for when you are testing something and what to see if the number goes up or down, but the number itself and all of these "tests" are kinda worthless as proof to other people that the knife is performing well. I see them more as diagnostic tools, not a scoreboard. ...But its fun though!
Hi, Ricky. I’m new to sharpening and trying to figure out whether belt sanders are a better approach than my jig with stones. The thing I’m stuck on is that some folks say motorized dry grinding heats the apex of the blades up almost instantaneously…that few microns on the top of the edge…and that this damages the heat treatment on that part of the edge, therefore weakening the edge. What’s your take on all that?
I totally get where you're coming from. The debate between belt sanders and jigs with stones is a hot topic in sharpening circles. You're right that motorized dry grinding can generate heat quickly, and if you're not careful, it can overheat the very edge (those few microns at the apex). When that happens, it can mess with the heat treatment and weaken the edge. But here's the thing-if you use light pressure, keep the belt moving, and pause often to check the blade, you can avoid overheating altogether. That said, using a jig with stones is a safer bet for beginners because it's harder to overheat the blade, and it gives you a lot of control. Plus, stones help you develop a "feel" for sharpening that comes in handy no matter what method you use. Ultimately, both methods can give you razor-sharp results-it just depends on your comfort level and the tools you prefer. If you're curious about belt sanders, maybe practice on a cheap knife first to get a feel for it.
@ Thanks for the response. Good stuff to consider. I have a WS Ken Onion MK2 with the grinder attachment sitting here, new in boxes, and think that based on your response, I’ll take those back today and focus for a while on just getting jiggy with it. If there’s ever a need for quicker sharpening, it’ll always be available. One more thing if you have the time (hate to keep asking questions)…have you tried the water-cooled wheels like the Tormek and Wen units? I’m all googled out and still don’t have a good grasp of whether there are real benefits to those vs belt sanders. I see the value in the belt sanders, particularly with trying to get convex edges. Can’t help but assume those big wheels would give concave results but haven’t tried any.
@@brad4817 I have 0 experience with those units. Practice practice and more practice. I just did a Christmas giveaway of the knives I have collected to practice on of the past few years. I had over 100😂
Yes . . . Now think about what's happening to the atomic & crystal structure of the metal that remains connected to the blade to form your apex during the sharpening process. - Metal generally cracks along crystal boundaries. - Carbides have notoriously poor bonds along these crystal boundaries. - Chipping of the knife cutting edge is often blamed on the end user. - When I look at cutting edges under a good microscope they most often look like flaws in the knife steels. - Any thought on how we avoid damaging the bonds within these crystal boundaries?
It's insightful that you’ve observed flaws in cutting edges under a microscope. Some chipping can result from manufacturing inconsistencies, such as poorly distributed carbides or improperly heat-treated steel. However, as sharpeners, we can mitigate some of these risks through precise technique and attention to detail. Ultimately, avoiding damage to the crystal boundaries comes down to a combination of understanding the properties of the steel you’re working with and using sharpening techniques that minimize heat buildup, pressure, and uneven forces.
@@PerfectBlade-zt9rz Appreciate the thoughtful answer & your willingness to share. My 50+ years of metal work has lead me through a similar thought process. If your thinking goes beyond that, it a lonely place to occupy, so I share these additional thoughts. I stumbled across a video from inside a Japanese knife making factory where they repeatedly heated the blade with hot water during the grinding process. This kind of backs up my thought that the rate of cooling is also important to control. Any thoughts ?
If you really want a knife to cut well especially through high density vegetables, & you have a lot of time & patience, thin it until it's 0.025 about .375 up from the cutting edge. Caution . . . this knife will no longer function as a crow-bar, but it will cut well.
There is also a near focus limit dependent on the lens. If you don't have the specs test with a grid pattern. If you still have problems post a question.
Print out or draw a grid pattern maybe 1/2 squares black ink on white paper/plastic. Laminate it with packing tape if it's paper or have it laminated. Glue a magnet to it & to mount it to the back side of the blade. Anything similar will work.
@@danielbottner7700 Thank You!!!!!
@@PerfectBlade-zt9rz Depending upon the focus sensor you might have better luck at positioning the grid pattern at a 45º angle to the camera frame.
New sub! Love the knives! I’m from Indiana! Good video keep them coming!
I used to have a Case knife exactly like the black handle knife you have. It had three blades and was difficult to open it. I traded it for another knife.🙂
Holy i need one of those blades mine keep rusting even if i dry after wash 😢keep it up 😁👍
Send me your address and I will mail you 3 knives. I am doing a free giveaway of knives I collected this year. Not even joking:) . Thank for watching.
Try putting your hand behind the blade to help the camera focus.
Nice ones there . I have several fixed an pocket Casexx older unused knives along with a few other brands unused also older all USA brands. I'm thinking about selling . Let me know if you may be interested. Thanks and good luck with the next one.
You have the belt going away?
Abrasive belts are edge leading, leather strop is trailing " going away from me".
@ ok even with the servo motor? Variable speed edge trailing with abrasive belt?
@@robertmunguia250 Edge leading with 120 and A30 abrasive. Edge trailing with leather belt only.
Just sub'd to your channel. Keep it up 👍
Thank You for subscribing. I returned :)
Those are beautiful 😊
Do yourself a favor and put a dust mask on. What's the story on your machine? I've found on my old Delta 1X30, it's easy to burn stuff with the higher grit belts. Bought a solid-state speed control but the motor sounds funny and I'm kinda afraid to use it. May not be the proper application. 👍🍻
Sure thing! I usually wear a mask, just not during the short time I'm making a video. Plus, I've got a high-tech air filtration system to keep the air clean. For my setup, I’m using a Consew sewing machine motor and upgraded idler wheels from Curry Custom Cutlery to keep things running smoothly.
