I have been binging your videos all weekend! Love them! You are on my top 3 all time favs along with High Carb Hannah & Plantiful Kikki❤️. I used to be one of those who said I cant afford to eat healthy, so Imlove these videos!!!
aww thank you so much!! I think it’s so important now more than ever to share healthy inexpensive meals because with how tough 2020 has been to many I want to showcase eating a plant based diet is the easiest thing you can do!
I have been watching you for almost a year and you inspire me so much! I just started with my vegan lifestyle for almost a year although my husband and children arent completely vegan Im so happy to say they eat like this a few times a week! Love your videos
I usually make my salsa verde in the blender, I've done it for years, but it never once occurred to me to get one of those big ol' cans of pickled peppers and just dump it in and blitz it. I'm totally trying that!
You seem so humble and kind. Your recipes are creative, nutritious, and from the looks of them, quite tasty. If you like, I can send you a recipe for a from-scratch, delicious, inexpensive enchilada sauce given to me by my friend from Mexico City. We love it.
Suzy Id love that!!!! ❤️ and thank you -- I’m just trying to share easy plant based recipes anyone can make to showcase how easy plant based life is!! It’s working for me and I love it so I want to share what I love!
Absolutely love your content! I had been looking for something exactly like this for years! Have binged nearly everything in the last week :) I'm confident you will be a success here.
Love this series! 💕 Great meal inspiration, thank you. I’ve just purchased a multi cooker, so am keen to start making more of your recipes that use this appliance. Yay for easy meal prep! 😃
found your UA-cam today. I love your set up!! The way you have the exact grocery list in the description makes it easy to just go get exactly what you bought without having to go through decoding the recipes. I am impressed and excited to start doing some of these challenges to aid in our financial freedom journey!!
Hi Miranda, I dice up a few of those canned jalapeños and cook them with my precooked pintos and I add some spices. I cook them till they’re a little saucy but not mush. They’re great with the rice and tortillas. You can eat it like that or roll that all up in a tortilla and pour some of your spicy sauce on it to bake. Thanks for another great video.
That sounds really good! All of it! I plan to use them more often because they add so much flavor and I really liked that they also had carrots not just jalapeños!
Have you ever tried spaghetti squash I saute red, yellow and orange bell peppers onions season with garlic& onion powders about 1-2 teaspoon each then add in your prep cooked squash And I add beef base, soy sauce too your taste. But can use veggie base instead of beef base. Put it this way my husband & son curled noses up about. But they liked it so well I only was left with 1 serving out of a 16" skillet.
What a great idea with the pepper sauce ! You could mix some of that with tomato sauce or ranch dressing, etc . Definitely going to save this video, I’m all into simple meals 😄
My mother has been using canned jalapeños (and garlic powder) as her homemade green sauce for years. She makes it once per week and we all love it. You can get those canned jalapeños from your local Hispanic market for much less.
Your mother is a genius! I have never seen these can jalapenos before and now I need to be on the lookout for them!! I would have never even given them a chance if I was doing a dollar store challenge!
This all looks delicious. I love how are creative you are and it totally look nutritionist. Again not a vegan but eating plant base sometimes. Keep up the great videos.
Thank you!! I’m glad you said that I think it’s really up to the individual what you want to eat but I always know someone will come along and say “you need more veggies”😂
I just got back from Dollar Tree. I have been thinking about the sauce I watched the video. I bought three cans. Turned out I only needed one. I didn't use all the liquid. I saved some to add veggies to later. I put some in a squeeze container after that I added a can of stewed tomatoes and blended it for enchilada sauce put some of that aside. The last amount a rinsed a can of black beans and blended it. It is all so good. Thank you so much for this video. I love spicy food but I don't think I could eat it the way you did. 😂😂😂 Looking forward to using the black bean mixture in a wrap.
I'm going to have to try the spicy sauce, I'll go a little lighter and make the spicy sauce, freeze in ice cube trays then add a cube in with a can of tomatoes lol. Loved your live yesterday, such wonderful energy from you and everyone in the chat! Truly enjoyed the positivity! Have a great day and TFS💕💕💕
Thanks for sharing 💞 Since watching your videos I literally chuck frozen brocolli in with all my meals (not breakfast ha ha). I even airfried some today for lunch with asparagus and had it with black rice.
Well I started eating broccoli for breakfast a few weeks ago 😂 you might be changing your mind!! I always hated veggies in the morning but I am loving it!
Those jalapeño peppers are the bomb!!! The best ones I have ever had. Great video! Nope,,,,you shouldn’t have blended them up.They are so good straight up outta the can.
I just found your channel and I love how simple but creative your recipes are. Just FYI since you also shop at Winco, they have a powdered enchilada sauce for $.48/pk and I love it. It's in the spice isle with all the other other packaged spice packs. It's not really spicy but I don't like it to hot. It is cheap and easy which is how I like to cook! Love your channel.
I just found your channel, greetings from Germany 😊 I get annoyed when people tell me that vegan food is expensive. I usually spend about 25 Euros per week (including some junk food) but I always say that I could definitely live off 10-15 Euros per week if I had to 😊 great videos
Hello welcome!!❤️ same I hear it all the time and I want to prove everyone wrong! If you stick to whole food plant based it’s literally the least inexpensive way to eat! The spendy parts are vegan cheeses and meats usually
The pinto beans at dollar tree are still a lb the red beans are only 12 oz. If you are really on a budget that quite a difference. If you don't like spicey just scoop out the seeds then you get all the flavor and lose 1/2 the heat. Personally I make my own enchilada sauce but I like ranchero sauce.
Oh that’s good to know! I may have ventured into making my own enchilada sauce but since this was a dollar tree challenge I think that’s cheating 😂👏🏻 but this sauce was excellent!
I will have to check out my dollar tree for those jalapeno cans. My dollar tree is super tiny, but that sauce has my wheels turning for possibilities! Thank you for the live taste test and an "outside of the box " recipe. Yummmm☺
ohhh yes, that must be a nice dollar tree -- finding one with bread is rare for me. Also, Budget Bytes has a homemade enchilada sauce that uses things you probably have on hand (super easy). I've made it, and it just requires some quick mixing on the stove. She's great anyway for easy cheap meals.
Love it I'll have to look up that recipe! For this challenge I just wanted to get only dollar tree items otherwise I would have just gone to another store LOL!! But yet I will say the dollar trees here are huge! I don't shop at them much because the 99c store is so much bigger and nicer with so many more options! Its a small market!
I just love rice more than noodles TBH plus rice is so inexpensive! ! I think rice has more of an Asian flate unless you're using actual Ramen noodles or rice noodles!
Enjoyable videos. I've been eating the same way. I like to keep my starches separate from my sauces, and just mix it as I use it. Seems to last better in the fridge :-)
Those are pickled jalapeños for garnishes, flavoring your food, or some people have it as an appetizer. It's a staple in Mexican cooking to have a "chile" with every bite. Don't call it weird haha.
