Richard i would suggest to you my own style about those veggies, what i do is individually boil eggplant , bochoy or pechay, sitao. , place it in a bowl, and set aside , the water that i used in boiling those veggies will be added to the beef broth , it adds flavor to your kare kare at masustancia pa ! A tip from Lola Rorie of Colorado ( 82 yrs old ako ) my hubby is cooking .

Dry fry a 3 tablespoon of raw rice then when the rice is brown , blend to powder then add to your soup while it is simmering to thicken. The soup will provide another distinct layers of flavor..
I grew up with that too, toasted rice flour to thicken the kare kare sauce, giving it that distinct flavor that you mentioned. The dish looks good anyway, more power to you from NY!
He does know his way around the kitchen... and his set up is also a testament to that. Love his pizza stove ( probably Ooni brand) at the back and his apron sink. And yes, the best reward for a cook or chef is to see loved ones enjoying the food prepared for them...gaganahan ka magluto and to experiment

Try toasting the sweet rice before grinding it gives another layer of taste and aroma. I have not cook kare kare while I was in the pinas. I moved in the US and medyo nakaluwag luwag now I perfected my kare kare and the good news is I turn my passion of cooking into pangkabuhayan. You remembered me of my Dad with Chinese blood and he was really a good cook but my mother Hindi siya marunong magluto kasi merchant siya kaya no time to learn cooking. I am watching you all the times sweeter ni Lucy sa iyo not only super gwapo, mabaig, family oriented and a good chef.
Kare kare is my favorite. This is how I cook my kare kare. After boiling the oaktail I throw the water with scum, then boiling again. After boiling and the meat is soft I separate the oaktail & the broth I put in the fridge overnight next day you will see lots of fats in the broth I throw the fats away. For alamang I add vinegar and sugar to balance the taste.

You really look and sound like a professional chef (with your knowledge of cooking and tips)...That's the best thing in the province - you have the herbs and veggies whenever you need (or you can plant them anytime). I remember in my younger days and when I was in Pinas, we had a neighbor that had atsuete tree and we sometimes asked from them too. Now, here a small bottle of powdered anatto is about $6.

Try toasting the sweet rice before grinding it gives another layer of taste and aroma. I have not cook kare kare while I was in the pinas. I moved in the US and medyo nakaluwag luwag now I perfected my kare kare and the good news is I turn my passion of cooking into pangkabuhayan. I also fry my eggplant. It takes mire yummy than just boiling. You don't have to put more oil as long as you put the skin down first.

You remembered me of my Dad with Chinese blood and he was really a good cook but my mother Hindi siya marunong magluto kasi merchant siya kaya no time to learn cooking. Kare kare is my favorite. This is how I cook my kare kare. After boiling the oaktail I throw the water with scum, then boiling again. After boiling and the meat is soft I separate the oaktail & the broth I put in the fridge overnight next day you will see lots of fats in the broth I throw the fats away. For alamang I add vinegar and sugar to balance the taste.

Looks so yummy. Missing Kare-Kare here. You really look and sound like a professional chef (with your knowledge of cooking and tips)...That's the best thing in the province - you have the herbs and veggies whenever you need (or you can plant them anytime). I remember in my younger days and when I was in Pinas, we had a neighbor that had atsuete tree and we sometimes asked from them too. Now, here a small bottle of powdered anatto is about $6.
