This has become my go-to mussels recipe, it's simple yet excellent! Once I had some university friends over and made these, the appetite we all cleaned our plates with was a sight to behold!
It is best to use fresh mussels if you can get them, but if you can’t, just submerge your packet of frozen mussels in a big bowl of water for about 20 minutes before cooking them.
A small amount of lemon juice usually works for me. Do heat the cream throughly before adding the lemon juice. You can start with adding half of the lemon juice first and see how it goes from there. Alternatively you can add the lemon juice and cook it down for a bit to make the acidity less strong and then add room temperature cream.

If you are using fresh ones, just a few minutes till they opened up.

Fresh and uncooked would be best. I had to use the half shell frozen ones.
