    1 tbsp of olive oil
    2 tbsp of butter
    1 onion cubed
    4 olive garlic minced
    1/2 tbsp of chili flakes
    1 cup chicken stock
    1 cup of whipping cream
    zest of 1 lemon
    3/4 tsp salt
    1 tap black pepper
    3 tbsp lemon juice

    This has become my go-to mussels recipe, it's simple yet excellent! Once I had some university friends over and made these, the appetite we all cleaned our plates with was a sight to behold!

    Were these frozen mussels? If yes, how do you thaw them before cooking? Thank you.

      It is best to use fresh mussels if you can get them, but if you can’t, just submerge your packet of frozen mussels in a big bowl of water for about 20 minutes before cooking them.

    Wondering if lemon in whipping cream might curdle the cream?

      A small amount of lemon juice usually works for me. Do heat the cream throughly before adding the lemon juice. You can start with adding half of the lemon juice first and see how it goes from there. Alternatively you can add the lemon juice and cook it down for a bit to make the acidity less strong and then add room temperature cream.

      Hello! You can just replace the chicken stock with vegetable stock or even water!

      If you are using fresh ones, just a few minutes till they opened up.

    Rubber mussels 😂😂😂 I would have half shelld them raw, not cook them twice 😂😂
