"The captain goes down with his ship." That's been throughout history like when Captain Edward Smith stayed on board Titanic when it sank in April 1912.
Actually, in most shipwrecks recorded in history, the captain almost always survives the wreck and only in few cases he perished, Titanic was a special case since als,o it was common for men to be among most of the survivors, and that women and children to be the most to suffered casualties ...something that in Titanic was the opposite.
Neĸυ Saĸυraвa Costa Concordia captain was the worst captain ever, I’m glad he was forced to return back to the sinking boat and how afterwards his licence got taken away

What would have made this scene even better is if we weren't shown that Jack took the heart out. That way the audience as well as Jones would think the heart was still in the chest. This scene would then be doubly iconic.
That would have been a fun twist, but might have ended up being confusing, considering that while Jack initially steals the heart, he ends up getting tricked himself by James Norrington, who stole the heart from Jack while no one was looking. It would have been super cool to realize in the same moment as Jones that Jack tricked him, but it might have taken away from the ending that James stole the heart to give it to Lord Beckett.
