There are no different styles. Real birria is made from cabrito and consome from the drippings. Quesabirria with beef is not real birria, this place is not a real birrieria. Its more like a hipster taco spot.

No puedo estar más en desacuerdo con mis propios paisanos, no se trata de hacer todo exactamente igual a nuestra región, incluso entre estados de nuestro mismo país las recetas cambian. Lo que hace @야미보이 Yummyboy es excelente, digno de receta mexicana auténtica y sí, usa algunos ingredientes o técnicas que normalmente no se usan acá, pero si existen y si se usan para variar sabores y experimentar, incluso hay familias con sus propias recetas secretas y no dudo ni un poco que usen alguna técnica de las que usan en este video. Aparte para finalizar el video se ve que hace la "Birriamen" (combinación de birria con ramen) la cual fue una creación en México, incluso la hace mejor, así que por favor detengan sus opiniones pasivo/agresivo y feliciten al chef !!

@@luisalvarez9598 el aceite de oliva si se usa en muchas casas, obvio en la calle no porque es caro y la gente no está acostumbrada al sabor, en cuanto al jugo de limón es obvio, acá hay limoneros por todos lados, cosa que en corea y japón no es así de fácil conseguirlos, uno trabaja con lo que tiene a su disposición. @@tictacterminator this is very much an asian take on mexican street tacos while most of the methods to cook the food are wrong like using a propane torch to melt tacos is odd or using olive oil. he should be using a large upside down bowl and placing that over the tacos or deep frying or putting them into a oven to finish off the cooking but most of the time even these method is not used. to finish off the taco its moved to a lower heat side of the grill to allow the cheese to melt or just to keep warm.
What a beautiful take on birria and mexican food, the aesthetics are nice, the cheese crust on that quesadilla 👌🏽, also i loved the bowl at the end ❤ That’s where Mexico and South Korea met in this video, I remember the first time I ate beef bulgogi with lettuce leafs and chilly paste 🤤 I remember thinking this is the Korean taco 🌮! @@WhiteCranKTo make the tacos crispy, you only need the same fat from the birria, just separate it by putting some of the birria broth in the refrigerator and it will form a crust, a crust that you then heat and the pure natural fat from the birria comes out.
Food looks amazing. Confused why you would use bottled lemon juice when everything else is fresh? Also what's with drowning the meat in oil? It's doing absolutely nothing without adding acidity.
Exactly, normally you would take away the stems, seeds and veins from the chilies and just use the skins, there's so many things that I would like to point out that actually go against the traditional way of making birria but I don't want to be rude.
They really love their propane torches - just flip the tacos. No need to go medieval with it! Other than taking a few small liberties, that looks like really good birria though. Now I have to cook some up myself - it's been a year since the last time. ETA: I guess it should properly be called quesabirria.
