Lose the liver. Seriously, you're asking for trouble with that. Think about it, what percentage of an animal is composed of liver? Less than 1%? Lets say you eat a cow a year, to simplify things. Now think of how much liver is in that cow. That's the MAX amount of liver you should eat in a year. You're eating that in two or three weeks. I finish them with a weed torch, which is like she says, only about a minute instead of like ten-the main point is you get a nice Maillard effect, and you don't cook the inside (much) more. I find it works even better if you let it cool down a bit before finishing.

To each their own, but I really enjoy how my house smells cooking mine in a cast iron skillet. Then again, I'm old and don't own an air fryer.

I smoke them in my pit boss then reverse sear them. They’re delicious. I’ve never used an air fryer. It doesn’t sound appealing to me.

I cook my steaks in the air fryer, but I don't cook them from frozen...they're in for 16 minutes on 200°C flipped half way through the cycle and then let it sit for 2-3 minutes afterwards...add salt...perfect steaks...
