    Dear loveliest woman! And Jim! Sweden here, bought a Presto and started canning thanks to you! Still a newbe and learning. Need to get it to work with Weck jars because ONE Ball mason har is about 9 dollars over here. ONE lid is 2,3 dollars..
    Love from Sweden, today with -25 celsius. My first attempt on raw pack chicken is on the stove.

    Thank you for leaving in the exploding jar! So many people would have edited that out. I'm a new canner, it was good for me to see that. I'm glad you're okay! We love chili, I'm happy to learn that it's okay to can.

      It could be a few reasons for siphoning, one is not enough head space/de-bubbling the other could be the ring. Hope that helps. Need to check head space, always de-bubble and check rings are on properly around the rim (some maybe bent from over use). Don't tighten to much that also could siphon. If you see one has let it cool down at least 10 minutes before opening the jar and with caution.

    I hope this does not sound tacky or hurtful, but I am thankful that you showed the jar spewing out when the jar was opened. Now, I know that I am not the only one this has happened to. I will be canning chili this week. Thank you for sharing with us.

    I've learned my lesson before by not sticking to the rules of cooking. As long as you didn't get burned...lesson learned. Take care Rose and thank you for sharing this video. It did remind us not to hurry the process even if we are hungry. LOL

    Do I dare tell you that you are my hero?? When it comes to preparedness and canning, your the one!!! Thank you for including your oopses along with your tested knowledge with us! I look forward to canning chili. I have some empty pint jars and my goal is to keep them all filled. After we eat what's in them I only want a handful empty and when there's enough to fill a canner (mainly my Nesco, electric pressure canner) I process another recipe. You really motivate me!! Thank you!

    WOW! This is a wake-up video, for sure! I have never attempted to open a freshly removed jar (10-15 minutes) from the pressure canner. As you immediately pointed out, you are fine, not hurt, and your other immediate point is to use a buffer/towel next time opening a hot jar. Very important safety lesson 💜💜💜💜

    Loved the quick canning video. Nobody needs to watch the tedious parts of filling, debubbling and cleaning tops of jars. So glad you were not hurt with opening the jar. I literally jumped because I thought you would be hurt. As another mentioned good for you for leaving it in. I would never know that could happen.     That little bit left in the pot is usually what I have. It makes a great dinner with no leftovers. Just add biscuits. I'm glad you didn't get burned. Chipotle chili will definitely make it to my list of canned foods. Thank you.

    This looks so yummy, I would love to try adding to a tortilla with some shredded cheddar cheese and sour cream. I bought the book because everything you've made so far looks like I would like it too. Your reflexes are still good Pam, I thought for sure you would be burned. I've never opened a jar like you did and I probably will never after seeing what can happen. Thank you for sharing this yummy stew.

    That really startled me! My jars are usually still boiling when I take them out of the canner. Those contents are really hot. I am so glad that you didn’t get burned. Great recipe. I have that book, so I will have to make it.

    I'm so new to canning that I have yet to make my purchase of the presto induction pressure canner. Been doing a lot of research and found your channel!! Love all your recipes and thank you for sharing all of your testing! This looks delish!!

These offer authoritative and scientific data which gave me the information I needed to make my decision about beginning my journey into canning for, as Pam puts it, food safety, security and preservation “. ❤

      You will enjoy your induction compatible Presto canner. We purchased one about 8 Mos ago and have canned up a storm. We have an induction cooktop as well as an induction hob and like being able to use the hob in another room when we don't want the big canner taking up space in the kitchen. Be sure to get a weighted pressure regulator so that you don't have to "watch" the pot/guage once it comes to pressure. You can tell by sound what it's up to. Good luck!

    In the recipe when you say 1 cup of bell pepper (red or green) is it ok to mix jalapeño or habanero peppers into it also? As long as the total is sill 1 cup of Pepper. Is it still a safe recipe? Thank you for your videos!

    Pam, I've been watching your channel for about a year now and have learned so much! I canned this recipe yesterday and it got me to thinking (scares my husband sometimes). We just bought a Harvest Right a couple of months ago and I can see this recipe being a welcome addition to our freeze dried meals. Thinking Trail Grazers, how would you prepare this recipe to freeze dry it for the trails? Instant Pot? I'm hoping you will give this one some thought and maybe show us how to freeze dry this. My husband had it for dinner last night and REALLY likes it!

    Glad you are ok opening that hot jar. I would have waited so the bubbling cooled down first. I would have got burned if I did that. Again glad your ok. Thank you for sharing that part.

    Oh no, I was expecting them to explode when you took them out of the canner in 35⁰ wind. I would never ever open until they sealed and cooled down. I'm happy you're okay!! You'd have to know my luck.😉🤗

    I’ve just canned pinto beans, could I make this with everything but the beans then can that and combine it when reheating? Are there any no-nos with spices? I love to add fennel seeds and fennel seed powder to my chili.

      I think in another chili video she did she had a lot of different spices. I’m going to add all the spices I would if I was making it on the stove.
      I saw too where she said you could make the chili on the stove and then can it….

    Do you just brown the meat or cook it done. And you could add corn.

    That jar wasn’t sealed and cooled down, it was still processing and hadn’t finished the depressurization of the jar. I hope Pam’s hands are ok, sometimes the burns happens later. Silvadene burn cream is excellent. Sending prayers for you and Jim!
