That's a great question! I typically like to look at processes with some variances (or when multiple people are involved) as workflows. So if steps A, B, and C are always the same, define and document those steps. If step D varies (or involves a level of creativity - like you'd see in graphic design, for example), give the overall parameters needed to complete the step - along with as much context as possible. Systems are always evolving and needing updating, so there's always the opportunity to fill in more details as they become available.
