    What is Teppanyaki?
Teppanyaki is a Japanese cooking style that involves grilling food on an iron plate. The word teppanyaki is derived from the words teppan, meaning iron plate, and yaki, meaning grilled or pan-fried.
Teppanyaki is typically cooked in front of guests on a large iron griddle, and the chef will often perform theatric knife skills while cooking.
Common teppanyaki dishes include steak, chicken, shrimp, and vegetables.
    History of Teppanyaki in America
The first teppanyaki restaurant in America was Benihana of Tokyo, which opened in New York City in 1964.
The restaurant became popular for its theatrical cooking style, in which chefs would entertain guests by flipping shrimp tails into their hats or catching knives mid-air.
The popularity of teppanyaki in America has grown since the opening of Benihana of Tokyo.
Teppanyaki restaurants can now be found across the country, serving up delicious food and entertainment for their guests.
    Difference Between Teppanyaki vs Hibachi
Teppanyaki and hibachi are both Japanese cooking styles that use a grill or griddle. They are similar in that they both use high heat to cook food quickly.
However, there are some key differences between the two.
Teppanyaki is typically cooked on a teppan, which is a flat iron griddle. Hibachi is cooked on a hibachi, which is a small, portable charcoal grill.
Teppanyaki is typically cooked with vegetables and meats, while hibachi is more often used for seafood.
Teppanyaki is usually served as a main dish, while hibachi is often served as an appetizer or side dish.
Teppanyaki is cooked with soy sauce and other seasonings, while hibachi is usually seasoned with salt.
So, while teppanyaki and hibachi are both Japanese cooking styles that use high heat to cook food quickly, there are some key differences between the two.
The popularity of teppanyaki has grown exponentially in recent years, with more and more people looking to get in on the action. If you're thinking about becoming a teppanyaki chef, there are a few things you should know.
First and foremost, it takes a lot of skill and practice to become a master teppanyaki chef. You'll need to be able to perfectly control your knife skills, as well as have a strong understanding of how to cook various types of food on a teppan grill.
It's not an easy feat, but it's definitely possible with enough practice.
If you're serious about becoming a teppanyaki chef, your best bet is to enroll in a professional cooking school. There, you'll receive the proper training and education needed to thrive in this career.
Once you graduate, you'll be well on your way to impressing guests with your flying knives and sizzling flames!

Chefs are indeed artists and at their highest level they perform their craft in a way that only honed skills and years of experience can express. I especially respect the consideration this chef took when retelling his fire story. Safety is so important to culinary arts.

I spent 20 years working my way up and becoming a chef and he's right. There are not many that you get that fulfillment from unless you are able to do it yourself.
