You can just get a mixing board and connect it to the two-input interface. Swap out instruments using the inputs on the mixer

I did have all My stuff out however it quickly became a problem because of dust, so time consuming to clean so most of My stuff stays in clear platic bags even the stuff on the desk.
Gear can be very helpful for example.. I bought a behringer umc 404 hated it its drivers sucked.. Then Got the Focusrite 18i8 3rd Gen. The Drivers on that enable me to drop my pc buffer size down to 64 now playing stuff on tracks feels amazing

I also have a UMC404HD. I actually love it. I have a few different interfaces, but the Behringer holds up good for me. I don’t use for guitar tho.

Just stay within your budget. There are plenty of cheap or used equipment out there that will get your ideas down and still sound good.
