- The "Land of the Long White Cloud" refers to New Zealand, and their national dessert, Pavlova, perfectly embodies this nickname with its cloud-like texture-light and delicate.
Pavlova originated as a tribute to the famous ballet star Anna Pavlova. The cake is made by whipping egg whites and sugar, then baking it at a low temperature for a long time without browning. The result should be a cake with a crispy exterior and an interior that’s spongy and lighter than mousse, melting in your mouth like cotton candy. Though the steps are simple, it requires great patience.
The recipe is at the end of the video, and we mainly do three things: bake the cake, make the lemon curd, and whip the cream. The rest is up to the oven!

🛒Ingredients:
Meringue
Granulated sugar 110g
Egg white (room temperature) 2 / 68g
Corn starch 1¼ tsp
Lemon juice ½ tsp
Vanilla extract ½ tsp
Lemon Kiwi Curd
Egg yolk 2
Granulated sugar 50g
Lemon juice & grated lemon skin ⅓ cup (80ml)
Unsalted butter 80g
Kiwi, diced 4
Whipped Cream
Cold cream 200ml
👩🏻🍳Instructions:
Step One: Meringue Base
Preheat the oven to 170°C (338°F).
Separate the egg whites and add lemon juice, then beat on medium speed for 1 minute.
Gradually add sugar in three portions, beating on medium speed for 30 seconds each time.
After adding all the sugar, increase to medium-high speed and beat for about 5 minutes, until the meringue is smooth and no sugar granules can be felt.
Add cornstarch and vanilla extract, then continue beating until stiff peaks form (as shown in the video).
Line a baking tray with parchment paper and shape the meringue into a round cake shape with a slightly lower center.
Reduce oven temperature to 110°C (230°F) and bake for about 60 minutes, until the outside is crispy. Do not open the oven door during baking!
Step Two: Lemon Kiwi Curd
Mix egg yolks, sugar, lemon zest, and lemon juice until well combined.
Over medium heat, add the mixture and butter to a small saucepan, cook until it just starts to boil, then remove from heat.
Strain the mixture, then add diced kiwi. Refrigerate until set.
Step Three: Whipped Cream
In a large bowl, combine chilled cream and cream cheese. Beat on medium speed until stiff peaks form, but the cream remains smooth. Do not overbeat.
