I did wrap them in burlap the first winter to protect them. I think they appreciate some shelter from northern winds. We are also a high elevation so I’m crossing my fingers that they survive with lots of snow cover. This year I got about 1 cup of berries that the deer didn’t eat. They prune them each year😅

I’m going to experiment with these and make adult gummies by filling the gummies halfway, adding a couple of drops of Olbas Oil (a German remedy) and then add more of the elderberry syrup. Is there a way to use something that’s sugar free? I don’t mind the honey, but trying too stay away from sugar
If you can find sucanat it could be used instead of cane sugar. It has more nutrition because it is less processed. Or maybe try monk fruit sweetener; 1/2 cup monkfruit per 1 cup of sugar.
Have you tried freeze drying them after taking them out of the molds? We make a syrup with cinnamon and ginger soo yummy. So much better and effective than the expensive store brands. Thank you for the video.

My guys don't get any white sugar and it's hard for me to put it in and on their supplements. I've always thought sugar suppressed the immune system and that seems counter intuitive.

Heating honey to that temp looses benefits...Honey should not be heated rapidly, over direct heat. Basically, the hotter you heat it, the more potential for reducing nutritional value. Excessive heat can have detrimental effects on the nutritional value of honey. Heating up to 37°C (98.6 F) causes loss of nearly 200 components, part of which are antibacterial. Heating up to 40°C (104 F) destroys invertase, an important enzyme. Heating up to 50°C (122 F) for more than 48 hrs. turns the honey into caramel (the most valuable honey sugars become analogous to sugar). Heating honey higher than 140 degrees F for more than 2 hours will cause rapid degradation. Heating honey higher than 160 for any time period will cause rapid degradation and caramelization. Generally any larger temperature fluctuation (10°C is ideal for preservation of ripe honey) causes decay. -John Skinner, University of Tennessee
My understanding is that honey should not be heated over 110 degrees or it loses it's health properties. Do your research on heating and canning with honey.
I believe the purpose of the honey here is to reduce the quantity of cane sugar used to make a medication palatable for children, not to make a health food.

Great effort however you destroyed your honey benefits by heating to that temp such a missed opportunity also you don’t need to spray your molds with anything. If your gelatin is working properly and your molds arnt old and paste their use date, few years and hundreds of uses, then skip the oil. Also watch the temp with your gelatin. Read up on the max temp for gelatin too hot and you will kill some or a lot of the gelatin gelling action. And citric acid is absolute last just before you pour into the molds. Also skim the foam off the mixture before you pour. You call them bubbles they need to be skimmed off with a spoon. It’s foam get rid of it. You also need to cure the gummies for 2-3 days to sweat out the moisture. It’s not drying, it’s called cure them. And not in the fridge it sits out on the counter dry cool spot. Not the fridge lol. But good effort. Just read up on the steps you’re doing and why, then you will understand what’s needed. Also the citric acids and sugar you rolled them in isn’t the best idea, very little citric acid because it will leach the moisture out of the gummy if you didn’t cure them properly. Make some changes listed and you will have a much better product.

I just made these and my family is plant base. So, I used maple syrup and a date sugar. Kid approved! Just in time for the cold and flu months ahead.

In my area elderberry grows, but so does poke berry and they look similar. But I steer clear of poke berry.

Using refined bleached sugar is something I don’t use , I will stick to raw sugar or organic cane sugar

Try replacing with monk fruit powder! It’s a 1:1 replacement and is an unrefined sweetener 😊
You can use apple juice to sweeten it.
I have used monk fruit. I can even use maple syrup, but I don't know if they have the preservative properties like white sugar.

You’re going to have to use some sort of gelatin. You could use any natural sugar you prefer.

But what unflavored gelatin that doesn't smell and taste like rank feet? Knox gelatin is nasty.
