  • Here is one of the absolute classic Greek meze recipes from the country’s de facto food capital, Thessaloniki. This recipe is found in many specialty meze restaurants, and it’s often spicy. Peppers are an important raw ingredient in and around Thessaloniki. Many different varieties are cultivated in the region, and they appear like a rainbow of colors, sizes, and shapes at farmers’ markets all over the city.     Ingredients
    ½ pound Greek feta crumbled
    ⅓ cup plus 2 to 3 Tbsp extra virgin Greek olive oil
    1 tsp cayenne
    Seasalt and freshly ground black pepper to taste
    1 to 2 Tbsp strained fresh lemon juice
    1 tsp dried Greek oregano
    1 tsp dried Greek thyme
    4 large long, fresh green peppers, such as Annaheims or Italian peppers, washed and dried
    4 long fresh Florina or other fleshy red peppers, washed and wiped dry

    Hello Diane- new to your channel. What a lovely recipe! The only thing I need to do is either pre-roast the skins off or buy large whole roasted red peppers. I cannot digest the skins, but love peppers and the stuffing sounds divine!
    I just ordered two of your cookbooks, The Greek Table and a vegetarian one. Can't wait to try your recipes! I have a hospital dietitian/modified Mediterranean diet that is post-surgery. The only food off the table is red meat. I can have lots of seafood/fish/white chicken/white turkey and tofu. Looking forward to all your favorite meals in your cookbooks, on You Tube and TV networks. This is going to be a healthful, delicious food adventure!
