Pale Kellerbier Recipe and Tasting - Homebrew Jar of Destiny

  • As we come to the end of September, we fire up another Jar of Destiny tasting session. The first of the 11th picks is John's Pale Kellerbier - 2015 BJCP Category 7C.
    Kellerbier is a sort of quick turnaround lager that can be very similar to most any classic German Lager you like, but it spends minimal time in the lagering phase of a traditional process.
    So it's OK to have a touch of haze and maybe a touch of sulfur.
    John focused on Pilsner malt backed up with a little Vienna and biscuit for character. This beer came out clean and refreshing. The nose was mostly the soft malt bill supported with floral or herbal hop character. The flavor was the same nice malt balanced by the hop bitterness and flavor.
    Recipe for 5 gallon batch:
    Grains:
    11 pounds (4.99 kg) of Dingemans Pilsner Malt - 88% of the bill
    1 pound (454 g) of Weyermann Vienna Malt - 8% of the bill
    8 ounces (227 g) of Dingemans Biscuit Malt - 4% of the bill
    Hops:
    2 ounces (57 g) of Homegrown Magnum hops (2023 harvest)
    Yeast:
    1 packet of Saflager W-34/70 Lager yeast
    (1 liter starter the day before brew session)
    Water: Spring water with 4 grams of gypsum added to the boil
    Instructions:
    Mashed grains at 150°F (66°C) for 60 minutes
    Boiled for 75 minutes
    Hops added with 60 minutes to go in boil
    Chilled to 60°F (16°C) and pitched yeast
    Fermented in keg for 2 weeks in fridge at 60°F (16°C)
    Cold crashed over 3 days - 33°F (1°C)
    Closed transfer to clean and sanitized keg.
    Forced carbonated
    Original Gravity: 1.052
    Final Gravity: 1.012
    ABV: 5.25%

    Haven’t had the home grown hop myself, but a neighbor grows Magnum and Warrior and has great results. I may just have to give it a try - Magnum and Mittelfruh are my hops of choice for most lagers. Well done fellows

    Love it, is kellerbeir just a helles that hasn't lagered? The last helles I brewed dropped clear so quickly that it would never have been a kellerbeir by that metric. Also W34-70 is amazing at 15c to 18c, it's ferments so cleanly for a lager yeast at warm temps.

      Haha, I like this question as this is as I would understand it. A Kellerbier or Zwickel is a young beer. And as the rumors stated, the name came from that the "Kelelrmeister" (brew master) goes to the cellar to check the beer state. so he takes a small one out of the barrel (the zwickel, which translate to drain valve). And the story says, from time to time you havn't seen him for a while because the Kellerbier was so good already then ;-)

      Perle hops were my other choice if I brewed with commercial hops.

    a well build beer will always taste good ,,some better a later time ,,but still good lol

      We picked the style three months ago. I brewed this beer 3 weeks before we shot this video.
