  • 中秋節快到了,今次為大家準備了一個萌翻的萌兔冰皮月餅。胖胖的造型飽滿的奶黃餡。而且不是一種,足足準備了三種~有原味,朱古力同抺茶味。為這個節日帶來滿滿的祝福。

    材料
    Mooncake Ingredients: 冰皮月餅材料:
    For 12 Mooncakes 可做12个月餅
    Custard Filling: 奶黄餡:
    - Milk Powder 45g - 奶粉 45克
    - Wheat starch 25g - 澄麵 25克
    - Milk 100g - 牛奶 100克
    - Eggs 2 - 雞蛋 2个
    - Caster sugar 45g - 细砂糖 45克
    - Unsalted butter 40g - 無鹽牛油 40克
    - Matcha powder, Cocoa Powder -抹茶粉,可可粉
    Snowskin 冰皮
    - Glutinous rice flour 33g - 糯米粉 33克
    - Rice flour 33g - 粘米粉 33克
    - Wheat starch 20g - 澄麵 20克
    - Caster sugar 20g - 细砂糖 20克
    - Milk 150g - 牛奶 150克
    - Condensed milk 13g - 煉奶 13克
    - Oil 20g - 油 20克
    - Fried Glutinous Rice Flour 2-3Tbsp - 糕粉 2-3大匙
    做法
    放入奶粉、澄麵、牛奶、雞蛋、砂糖混合
    Add milk powder, wheat starch, milk, eggs, sugar and mix
    蛋漿過篩,加入牛油,以小火加熱番炒至成團
    Sift the egg mixture, add butter, and stir-fry over low heat until it forms a dough
    平均分成三份以製作三種餡料
    Divide equally into three to make three fillings
    加入可可粉混合均勻,並包上保鮮紙
    Add cocoa powder and mix well, wrap it with plastic wrap
    加入抺茶粉混合均勻,並包上保鮮紙
    Add matcha powder and mix well, wrap it with plastic wrap
    原味奶黃餡包上保鮮紙
    Custard Filling wrap it with plastic wrap
    放入冰箱1至2小時增加硬度
    Put it in the refrigerator for 1 to 2 hours to increase the hardness
    放入糯米粉、粘米粉、澄麵、砂糖、牛奶、煉奶及油混合
    Add glutinous rice flour, rice flour, wheat starch, sugar, milk, condensed milk and oil and mix
    混合至無顆粒狀態
    Mix to a particle-free state
    倒入麵漿,用錫紙包好,大火蒸 25分鐘
    Pour batter, wrapped with aluminum foil, and steam for 25 minutes
    加入糯米粉小火炒3至4 分鐘成為糕粉
    Add glutinous rice flour and stir-fry for 3 to 4 minutes
    用刮刀不斷用力按壓令冰皮成團
    Use a spatula to keep pressing hard to make the ice skin into a dough
    用保鮮紙包起放涼
    Wrap it in plastic wrap and let it cool
    三種餡料各分四份搓圓放好
    Three kinds of fillings are divided into four parts, rounded and placed
    分出12g 冰皮與紅菜頭粉混合並用保鮮紙包好
    Separate 12g of ice skin and mix with beetroot powder and wrap it in plastic wrap
    量出20g白色冰皮、1g 粉紅色冰皮其他用保鮮紙包好
    Measure out 20g white snow skin, 1g pink snow skin, and wrap it in plastic wrap
    請載上一次性手套操作以防粘
    Please load disposable gloves to prevent sticking
    白色冰皮搓圓再壓平,中間放上粉紅色冰皮
    Round the white snow skin and flatten it, put pink snow skin in the middle
    放入餡料,把冰皮往上推至完全包裹餡料
    Put in the filling and push up the snow skin until it completely envelops the filling
    搓圓,再灑上糕粉再搓圓
    Knead round, sprinkle fried glutinous rice flour and knead round
    用少量冰皮製作尾巴並接到身體上
    Use a small amount of snow skin to make the tail and attach it to the body
    用筷子粘點糕粉推出小兔耳朵
    Use chopsticks to stick some fried glutinous rice flour to push out the rabbit ears
    用兩粒黑芝麻做眼睛
    Use two black sesame seeds for the eyes
    把兔子月餅放入冰箱 1-2小時後便可以享用
    Put the rabbit mooncakes in the refrigerator for 1-2 hours and enjoy

    請問每個月餅的餡料大約重量是多少?

      因應蛋的大少和煮餡料的時間水份渾發程度成品重量會有所不同,所以會先量餡料的重量再用等分方式分配餡料。
