Amazing dish. This is truly authentic Hindu Indian dish from South India... In my opinion it is among the PERFECT DISH category in Hindu Indian cuisine NATIVE to India: Why? (1) minimally processed: all ings are used in almost natural form .The rice is soaked, hand ground & STEAMED, fresh coconut scraped by hand, oil used ONLy for tempering, spices bloomed for max.flavor. (2) Nutritionally balanced: rice soaked & ground before steaming, with fresh scraped coconut, fresh curry leaves, optimum (perfect) balance of macronutrients & in highly bioavailable form, fermenting the batter increases the probiotics, with the oil & coconut providing the satiety, lowers the glycemic index, & also closing the protein calorie deficit. (3) easily digestible for all ages & almost all ailments... with minor adjustment in seasoning (4) with a very small carbon footprint: soaking & grinding the rice & dal greatly reduces the cooking time. The fuel for the fire is only the dried leaves & twigs & wood that is picked from the ground... the dead leaves & wood, keeping the ground clean, no fossil fuels, minimal toxins released into the atmosphere... Not to mention the manual labor going into the entire preparation providing the resistance & calorie burn for keeping the muscles toned & the aerobic benefits... Awesome food...This is interesting because, we have a similar fire pit in Ghana, West Africa called a 'Swish Oven'...It's made with red clay, shaped into three domes, with U shaped openings on each side to hold firewood, and another opening in front...The Ghanaian swish oven is steadier and also portable because, after molding, it's baked to set...Thanks for sharing your wonderful video. :)

my mom used to make fresh noodles from scratch just like this but in a different format since we are from Thailand, you wont believe the difference in taste and texture, you wont want to eat dry noodles from the store again.

Tahira Safdar Not a prblm if no idli moulds u can slightly saute the ground rice flour(grind d rice with less water but batter shd b smooth u might have noticed bfr pouring hw thickness same consistentcy) very very low flame(add the batter bfr d pan gets heat) stir slightly the colr vil change from white to turbid immediately u transfer d flour from pan to another vessel

we have this in Singapore. Its called Putu Mayam or Idiyappam. Singaporeans such as chinese malays and indians eat it. its very popular with orange sugar.
You ought to put the lemons in the noodle maker and squish them. Put a pan to catch the juice or the pan of noodles directly under the noodle maker. Lol

Hello. these are rice flour noodles. I don't know exact measures of this recipe but I had one in a famous south Indian cuisine restaurant. and I was not offered this dish as shown in video. Let me get back to the recipe which I had. take rice flour and make a thick batter adding coconut milk in it. then you should steam it as shown and make noodles. I had this south Indian delicacy with cauliflower curry and coconut milk mixed with pinch of cardamom powder and suger as per your taste. it was delicious. Enjoy!!!

You just need natural clay...take the clay and press it in that shape..it's not a big deal
Well, in northern Quebec, that would be a big deal - finding clay, for instance. Still, I'll keep that in my book!
***** you can use earthen pitcher to cook food..that would be great and healthy if you can find one..
Actually clay or cow dung works too. In the above case its mix of clay and cow dung that dries quickly and acts as mould perhaps.

Its not Idli. they only cooked the rice batter on Idli moulds. it's how rice noodles r made in South India.
