I've eaten century eggs since I was little, but this is my first time making them myself. My grandmother's house is in a secluded area with wide land surrounded by mountains, providing plenty of space to raise various poultry-chickens, ducks, geese, and rabbits. Most of the farm-fresh eggs we use come from her place. During a visit to my grandfather, I collected some chicken eggs and brought back some duck eggs that my grandmother had saved. Together, we made a batch of century eggs, also known as preserved eggs. The color of century eggs varies depending on the temperature, time, and ingredients used, but regardless of the color, they always taste delicious!

皮蛋最大的问题就是直接吃有碱味，但是拌入醋辣椒，大蒜，香菜就发生中和反应了。所以外国人每次直接吃一整个，这种吃法中国也很少人这么吃。

I like that she get help when needed, her sister, mother, and grandmother also whole family. We see a lot of content like this but they did it from scratch alone (maybe?) but we didn’t see. @@Runovaris They taste slightly fishy but full of umami, especially the yolk. The yolk texture is usually creamy, while the egg white part has a jello-like texture and is a bit chewy. Not at all sour or salty, but adds good flavour to whatever you're cooking
